Strain it, better if you let it sit and drain a while. I just cut the package and put on the dish rack to drain. Then cut up garlic and grate ginger. Put little extra virgin olive oil in wok (pan) and high heat, when hot add garlic and ginger. Oh, you can put a splash of soy sauce too if you want. Just a little. Subtle flavours. When getting a little brown, throw in blocks of tofu. Use spatula to slice tofu into thick pieces and lay them flat. Let them fry awhile (can put a lid on if you want), then flip them over and that's it. Done. Put it on her rice or veggies or whatever else she's eating. I do this almost every day and it's fast, easy. I have no time for anything fancier as I'm cooking for three and my daughter loves tofu.

Barbecue Tofu Sandwiches
"Finally a veggie sandwich with true barbeque flavor!"
INGREDIENTS
1 (12 ounce) package extra firm tofu
3 tablespoons vegetable oil
1 onion, thinly sliced
1 1/2 cups barbecue sauce
6 hamburger buns
DIRECTIONS
Drain the tofu between paper towels until most of the water has been squeezed out.
Slice tofu into 1/4 inch thick slices.
Heat vegetable oil in a large skillet, fry tofu strips until golden brown on both sides. Add onion and cook for a few minutes, until onion is at your desired consistency.
Pour in barbeque sauce (use more or less, according to your taste). Cook the mixture for ten minutes on low and serve on buns.

I love this recipe... it is so easy to make and kids love it. Even my mom, who hates tofu loves it.
Cheesy Pasta Bake
Ingredients (use vegan versions):
1 box Mori Nu tofu, extra firm
enough pasta to fill an 8x8 pan (hand full)
8 ounces of your favorite marinara
1/2 block of vegan gourmet mozzarella
spices: parsley, basil, garlic
optional: cayenne
Directions:
Cook the spaghetti halfway. You don't want it to be mushy once you bake it.
While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.
Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.
Then, grate your mozzarella. Use 1/3 to 1/2 of a block of vegan gourmet mozzarella. Put aside.
Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.
Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.
Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.
Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.
It's important to spray the top of the cheese with your Pam or other oil spray. This makes the cheese on top melt smoothly and have a golden color when it's done.
Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.
Serves: 4
Preparation time: 30 minutes
If your daughter eats cheese then you can use regular cheese and skip the PAM.
I like to add some mushrooms and black olives. Or you could even add some squash or eggplant to it.

This recipe is extremely easy and takes about five minutes.
You need:
Firm/extra firm tofu (it doesn't matter how much)
Soy sauce
Sesame oil
Pasta sauce (optional)
What you do is cut up the tofu into sticks about the size of fish sticks. Put them in a baking pan and pour soy sauce all over them. Drizzle some sesame oil over top. Bake them at 350 degrees for about 4 minutes. Eat them warm, or let them cool and dip them in pasta sauce. They make a great grab-and-go lunch!

You can always buy the tofu that is already seasoned. Just toss it into a salad or stir fry. Or you can use regular firm tofu, press it to get all of the excess liquid out then coat it in some Cajun seasoning and blacken it. That is relay good on a Cesar salad, even better if you throw the Cesar salad in a wrap!... If she is a vegan too, you can get eggless cesar dressing.

Tofu Nuggets: It's very easy and I think your daugther will love it!!
Kid-friendly tofu nuggets are reminiscent of chicken nuggets and can be dipped in ketchup, barbeque sauce or ranch dressing.
INGREDIENTS:
* 1 block firm or extra-firm tofu, pressed
* 1/3 cup soymilk
* 2 tbsp mustard
* 1 tsp onion powder
* 1 tsp garlic powder
* 1 tsp dried parsley (optional)
* 1/2 tsp salt
* 1/4 tsp black pepper
* 1 tbsp nutritional yeast (optional)
* 3/4 cup bread crumbs
PREPARATION:
Whisk together the soymilk, mustard, nutritional yeast and spices until smooth in a wide bowl. Place bread crumbs in a separate bowl.
Coat each piece of tofu with soymilk and mustard mixture first, then coat with bread crumbs.
Fry in oil until golden brown, serve with ketchup, barbeque sauce or other dipping sauce and enjoy!
For a lower fat alternative, lay tofu piece on a covered baking sheet and bake at 350 degrees for 25 minutes, turning once, until golden brown.

You can slice it and eat it raw. Top it with a mixture of soy sauce, sesame oil, sesame seeds and chopped green onion. It's pretty delicious. Or you could fry the tofu first and then top it with that mixture.
