Here are some of the spices and things that you will find in many Chinese recipes:
Star anise, sesame oil, five spice powder, oyster sauce, light and dark soy sauces, duck sauce, sweet or hot bean paste, black bean and garlic sauce, black bean chili sauce, Hoisin sauce, hot pepper oil, rice vinegar, "cloud ear" mushrooms, straw mushrooms, anxd Chinese dried chilis.
You can buy these items in almost any Oriental market, and a good Chinese cookbook will tell you how to use them.

I like spicy, so I use a condiment that's called Sambal Olek. Its pretty hot but if used in moderation it will open up your taste buds to a whole different aspect of Asian cooking.

hi kyle!
as others have said, there are many great chinese products now available at the regular supermarket... a favorite spicy sauce of mine is Sriracha. known to many as "the rooster sauce".
http://www.huyfong.com/no_frames/sriracha.htm
A fun recipe to try using the sauce is "the perfect shrimp". Check it out at:

have fun cooking!
