I'm new to the whole tofu thing. I dont know how to preserve it. Ive used part of it and its already been pressed. Do I freeze it? refridgerate it? in what packaging!?

HELP!

You don't freeze the Tofu. Put tofu in the container with cold water, save it in refrigerator. change the water everyday. It last for long time.
PS: You can buy tofu a lot cheaper and flasher at the Oriental glossary store.

I just eat the tofu after I open the package. Some packages have two blocks per package. The kind I buy comes in a plastic tray with plastic seal on top.

If I use one block, cut plastic half way, dump out the water, refill with fresh water, and put back in the fridge to eat tomorrow. Easy.

If we buy a lot of tofu, or tofu on sale etc., we put a couple in the fridge and the rest in the freezer. Yes, the texture will totally alter in the freezer, but that just makes it more fun to eat. After thawing frozen tofu, you can literally squeeze it like a sponge to get the water out.

Tofu?
I keep remaining tofu in the refrigerator, in a glass or plastic box, but I use the left over tofu up within a day or two. There are many uses for tofu.

Scrambled tofu:
I use extra firm or firm tofu, turmaric to make it look yellow, balsamic vinegar to make it tasty, onion salt and oregano and/or basil, plus mexican spice or cayenne to taste. You can add garlic, too.

I mix it well in a pan and heat it until most of the water has evaporated. Then I serve it with tamato sauce or similar. Tastes great.

Tofu pie
I use soft tofu, and add lemon pudding-mix in a blender. Sweeten to taste. Add water as needed. I heat it, since beans need to be heated, they contain a slightly toxic substance which breaks down in heat. Thereafter, I pour the tofu mix on a ready bought pie shell and let it cool, later I place it in the refrigerator. Tastes great, too.

Tofu slices
Tofu slices can be made from extra firm tofu. I dip them in a mix of herbs and balsamic vinegar, or curry, sprinkle them with salt and fry them. Great, too.

Refrigerate in fresh water in Tupperware. Even silken tofu will stay firm in the water.

I freeze mine on purpose because I like it firmer.

Also, marinate it and bake it to firm it up before using in almost any regular recipe calling for chicken. Sure it ads an extra step but the possibilities are endless.

The also sell it pre-baked and pre-fried (tofu pups). It is more expensive but easier to use and store.

Since tofu is bland, try some of your favorite flavorful dishes: I really like tofu fajitas (most of the spice packets are vegetarian) and tofu adobo (marinated in soy sauce with bay leaves and pepper).

Tofu is like a blank canvas waiting to be painted.

Refrigerate in cold fresh water for a couple of days or freeze it. Freezing changes the texture to make it more chewy and spongy. I thaw it by zapping for 1 minute in the microwave before adding to recipes.

Keep the tofu. It's better than hamburger meat. At least tofu doesn't have sh1te in it.

I transfer the water it came in and the remainder of the tofu into a plastic ziploc bag and refrigerate it. If you don't seal it then it may absorb other smells from the fridge, which could be offputting if there are any meat eaters in your household. If the water isnt enough to cover it, put a little bottled water in also to help preserve it :)

Refrigerate the left overs and use within a week! I like to fry my tofu in olive oil, and make some stir-fried veggies and serve it over rice, and add some soy sauce!

Keep it in your freezer and then when you are done with it throw it out. It has no flavour unless of course you add something to it to give it some taste.
