You are made of "meat," or didn't you realize that? Lions could eat you and they'd be quite happy to do so. We just happen to be higher up on the "food chain," as some call it.
Meat is not essential - and it's healthier not to eat it - it's a choice of many. It's better for the environment, cattle use lots of resources like land, grain and water. Their waste pollutes. Factory farming is filthy, unhealthy and cruel. I could go on & on but read Mad Cowboy and Slaughterhouse - that's a good start to understanding the considerations surrounding eating meat or not!

Interestingly, according to the Bible, man did not eat meat for the first 2000 years of human history. Life span for many was nearly 900 years. However, the first command God gives Noah after the ark comes to rest is "You will eat meat." Within 4 generations the life span was down to 120 years and within another 4 generations the life span was down to 70 years. Some have argued that with shorter life spans there was less time for man to do evil, but it appears we're still doing a pretty good job of that today. The Old Testament is replete with laws about which meats are "clean" or "unclean." Suffice it to say that you can have a healthy diet inclusive of meat, but most of the meat marketed today is shot full of hormones and has a high concentration of fat. Beef from lot-fed cattle contain 500% of the amount of fat as beef from range-fed cattle.
So the premise of your question is actually incorrect -- God does prescribe the eating of meat today though it was not his original design for mankind. (Vitamin B12 cannot be easily gained from plant sources today due to nutrient depletion; it must be gained from meat.) While I do eat meat today, I went on a vegetarian diet for six months 8 years ago and it healed me of a disease doctors said was incurable. I was able to give up my cane and start living again.

Vegetables are good sources of food that supply proper nutrients to the muscles and other organs. This is why animals(even human ones), are advised to eat meat as well as veggies. The waste matter of these animals also provides nutrients into the ecosystem to provide healthy vegetables and plants that give us fruits.

That's like saying if God didn't want us to eat trees why did he make them out of wood. There is nothing that says we must or even should eat meat. Which is dead, rotting flesh.

The god issue aside (that's not going to be solved on this website...), he made humans out of meat too and we don't eat them, he made mountains out of stone and we don't eat them...see where this is going?
Humans have adapted to be omnivores, which is to say we can eat just about anything, and sometimes have to to adapt and survive.
However we don't HAVE to eat certain food groups to survive and Vegetarians and Vegans have chosen not to eat meat. It is their choice and fair play to them.
