Roasted. Every time.
Get really good potatoes, scrub, don't peel. Boil for 3 mins. Drain. Put in hot oil with fresh rosemary and whole cloves of garlic and roast for about an hour until brown and crunchy on the outside and melt in your mouth on the inside. Divine.
Plus keep a couple over, put them in the fridge in a covered bowl and eat the next day, cold. Gorgeous.
I may just have to go make some right now.

i'm a vegan and there's only one way to make potatoes....
mashed
french fries
potato chips
french fries with chili and soy cheese melted in oven
mashed w/ salt, pepper and chopped green onion greens (this is awesome taste
grate a potato with cheese grater and fry (great potato cakes)
baked potato with pepper and ketchup
hash browns
mashed potatoes over veggie ground round topped with corn (yes that's shepherd's pie)
simple boiled potatoes with salt & margarine
and try this.....boil (or steam !!! yum) regular potatoes AND some yams and mash them together...excellent taste

oh, and as far as choice of potatoe, try yukon gold yellow potatoes for fries and mashed (the best !!!!)

wow, i guess there isn't just one way for a vegan to enjoy 'the potato'

Cream Potatoes
6 potatoes diced in cubes
1 medium onion cut into small pieces
Boil onions and Potatoes together until nice and
soft.Then take a cup of flour and add water and make it nice and smooth a creamy sauce add to your potatoes and Onions.add salt and pepper for taste it is awsome.

Make mash potatoes & use the left overs in potatoe bread rolls. The rolls are so moist & delicious.

I really like a good baked potatoe when they put butter on the outside and then bake them in foil. With sour cream and butter of course. Must be done properly.

a package of lipton onion soup, 1/4 extra virgin olive oil and cut up red potatoes. Bake in oven for about 35 minutes

I like to eat it as potato salad. Boil them till tender with the skin. Peel them. Wait till firm. Cut them in cubes. Add green onions( optiona), parsly, cumin powder, salt, pepper and oil.

I love, love, love all ways to make/eat potatoes! My fav right now is probably cubed potatoes, cut greens beans, cream of mushroom soup, and shredded cheese baked together. DELICIOUS!!!
