It depends on your own preferences, to a great deal. Some varieties have a distinct "baby formula" taste and smell, caused by an enzyme from the beans. More than a few people dislike this aroma.

I have tried 8th Continent Soy and Silk. I use Silk myself, since they use a rapid-heating method that greatly reduces that nasty enzyme and improves both taste and smell. 8th Continent has a bit more of the flavor, but not bad.

Shelf life is about a week once opened. Especially toward the end of that period, the milk can become a bit congealed, like buttermilk.

Unless you buy it in antiseptic packaging off the shelf, soy milk is always referigerated, especially after opening.

Just about any grocery chain has at least one or two varieties of soy milk these days. Check with several for the best prices.

I like Provamel and Tesco Value (in the UK). The Tesco one is weird - they do one called Organic which is nearly £1 per litre, and the Value one for half that price. However, the Value one has the Soil Association badge on showing that it is 100% organic!
Anyway - the different brands are, well, different so try a few and see what you think.
Personally I always buy the long life cartons (from the shelf not the chilled cabinet) and keep 2 or 3 in the cupboard all the time. You only need to refrigerate it after opening and even then it'll keep for well over a week generally.
Don't forget that you can use it in everything in place of animal milk - in drinks, in white sauces, on cereals etc.

I personally prefer the Costco brand (Kirkland). If you dont' have a Costco, try 8th Continent (most of the major grocery stores carry it in my area). I personally HATE the Silk brand... but the Costco ones I can actually drink plain... it tastes very similar to regular milk.

How long it lasts depends on where you buy it... it has an expiration date on there, but depending on how much the store sells, sometimes it's a month, sometimes it's two months. Most bottles say its' good for TEN DAYS after opening though.

All of it needs refrigeration after it's opened, but there are certain types (sold in a carton/box rather than a milk-carton or jug) that can be kept on the shelf for a very long time (several months or more) before opening. These are usually found in the same area as other non-perishable health foods like organic cereals and other organic/veggie boxed goods.

I think you should test the waters - try a lot of different kinds and decide which one is best for you. Some brands have vanilla, or chocolate flavored milk. Those are worth trying as well. The vanilla is great on cereal! You can pick it up at most grocery stores. It's sold near the regular milk. If you buy a really small cardboard container, those are usually on the shelf in the health food section. I buy mine from Wal-Mart or Sam's because it costs less there. YES! Refrigerate.

I buy Silk brand soy milk. I believe they have the best variety. I go to Sams club Like BJs or Costco, Which ever is near you. Soy milk has a long shelf life not opened.Once it is open it is like milk you have to refrigerate and use within seven days. That is why i buy the case of quarts. You can buy it in half gallons in your local supermarket but if you aren't gonna use it that often is is better to buy by the quart. They have different brands but I have found this one to taste the best and it is now organic.

I like Silk the best. It's in the dairy section of most supermarkets. I like it best because it's fresh and not as chalky as some of the brands that just come in the boxes on a shelf.

If you buy the boxed type, you don't have to refridgerate until you open it.

The Silk and other brands that are fresh need to be refrigerated all the time.

They should all last 10-12 days or so after opened.

Buy only organic. It's the only way to know it doesn't contain GMOs (genetically modified organism). USDA doesn't consider GMOs organic.

Main GMOs are canola, corn and soybeans. Glyphosate, the active ingredient in Roundup, kills conventional soybeans. So they (The Monsanto Company) genetically modified herbicide- and insecticide-resistant soybeans, also known as "roundup ready" crops, because they can be treated with large amounts of glyphosate with out dying. Most of the foods we eat contain GMOs, including soy beans. The long term effects of eating GMOs is unknown.

The shelf life of soymilk found in the refrigerated section should last about ten days. Unopened, packaged soymilk can be stored up to six months un-refrigerated. Once opened, refrigerated and use within 7-10 days.

Two brands to try that are made with organic soybeans include Kikkoman Pearl Soymilk and Silk Soymilk (silk never uses GMOs). GMOs aren't currently listed on product labels so buy organic, they're guaranteed. They can be bought anywhere.

Get a soy milk maker! I love mine!!!

If you're going to buy, be sure to read the label. Find the brand with the lowest number of added chemicals. Make sure it's got Calcium Sulfate added and find one that's low in sugar. Many of them have TONS of sugar. Look for any word that ends in OSE. Maltose, dextrose, sucrose, sucralose, high fructose corn syrup (the worst!)
