Stuffed pepper would be very colorful because you could use red, green, yellow or orange peppers! Or any combination!
Serve with mashed potatoes and a colorful fruit salad for desert!
Fiesta Stuffed Peppers
INGREDIENTS
1/2 cup cooked long-grain white rice
1 1/2 pounds lean ground beef
1 onion, finely chopped
1 egg
1/2 teaspoon salt
1 3/4 cups salsa, divided
1 orange bell pepper, halved and seeded
1 yellow bell pepper, halved and seeded
1 red bell pepper, halved and seeded
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
In a bowl, mix the cooked rice, beef, onion, egg, salt, and 1/2 cup salsa. Stuff orange, yellow, and red bell pepper halves with equal amounts of the rice mixture. Arrange pepper halves in the baking dish, and top with remaining salsa.
Bake uncovered 1 hour in the preheated oven, until peppers are soft and filling has reached a minimum temperature of 160 degrees F (72 degrees C).
Ambrosia Fruit Salad
INGREDIENTS
1 (8 ounce) container frozen whipped topping, thawed
2 1/2 cups shredded coconut
1/2 cup chopped walnuts
1 (8 ounce) can fruit cocktail, drained
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained (optional)
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
DIRECTIONS
In a large bowl, combine the whipped topping, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.

I can share a recipe for a colorful salad: take boiled chicken fillet (diced) and peeled diced apples. mix them together with guacamole sauce and put in a plate. cover with green salad leaves (e.g.iceberg), torn into smaller pieces, and on top put red cherry tomatoes, cut in halves or smaller. on the side of the plate you can put tortilla chips, so you have those beautiful green, red and yelow colors in the plate. enjoy

i think that if you do stuffed peppers, stuff them with rice then do anice crunchy side salad this is very coloyur fl you got the colour of the peppers and the colour from the salad.
