SAUTEED RICE WITH ALMONDS, CURRY AND GINGER
1 tbsp veg oil
1 tsp crushed garlic
1 ½ cups thinly sliced bok choy or nappa cabbage
1 cup snow peas
½ cup chopped sweet red pepper
1/3 cup chopped carrot
1 tsp ginger
1tsp curry
¾ cup chicken stock (or veg stock)
4 tsp soya sauce
1 egg (optional)
2 cups cooked rice
2 tbsp toasted chopped almonds
2 tbsp chopped green onion
In a large nonstick skillet, heat oil; sauté garlic, cabbage, peas, pepper and carrot for 3 minutes or until just tender, stirring constantly. Add ginger, curry, stock and soya sauce; cook for 1 minute.
Add egg and rice; cook for 1 minute or until egg is well incorporated. Place in serving dish and sprinkle with almonds and green onions.

Serves 4.

hey its the tested n tried recipe...n the outcum is just yum...u wont be able to stop urself from eatin

serves 4

ingredients

1 and a half cup unboiled rice
3 tbsp oil
2 green chillies-chopped
2 sprong onions-finely chopped
2 flakes garlic-chopped
1/4th cup finely sliced french beans
1 carrort-finely diced
1/2 big capsicum-diced
1 tsp salt
1/2 tsp pepper
1/2 tsp ajinomotto
1/2 tsp soya sauce
2 tbsp vinegar

method
1. clean wash and soak rice 4 10 mins. boil 6 cups of water wid 2 tsp salt. drain and add rice to boiling water. cooked uncovered till the rice is just done and still firm. do not overcook. strain. keep in the stariner 4 10 minutes to let all the water drain out. fluff up the rice with a fork to let all the steam escape.. now let the rice got dry

2. chop green onions, keepin the chopped green part separate.

3. heat oil, reduce heat. splutter green chillies.

4. stir fry garlic and the white onions leavin the green part.

5. add beans, then carrots. fry them properly. then add capsicum.

6. add slt pepper and ajinomotto.

7. add rice. add soya soauce and vinegar

8. add the green part of the onions. stir fry the rice 4 two mins and serve hot.

2 1/2 cups cold cooked rice
1/2 onion, diced
3 spring onions, chopped
2 stalks celery, chopped
1 capsicum, chopped
dash soy sauce
2 eggs
1 X 125g can corn kernels, drained
1/2 cup cooked green peas, fresh or frozen
50 g beanshoots
2 teaspoons olive oil



Method:
1. Heat oil in a non-stick frypan and make omelet with the eggs. Remove from pan. When cooled, cut into strips .
2. Fry onion in oil until transparent.
3. Add carrot, capsicum and celery and cook until soft.
4. Add rice and remaining ingredients and stir until heated through.

Notes: Make sure to use gluten free soy sauce if a gluten free diet is required.

toss/saute some shredded cabbage, mixed peppers(green,yellow and red), sliced red onions. add soy sauce, chilly to taste, vinegar/lemon juice, sweet corn and sweet chilli sauce and toss till all coated. put boiled rice(rice cooked and stored in the fridge one day before are much better) bean sprouts and water chestnuts at the end and mix well for 1 more minute. add salt to taste. other vegetables which go well in veg fried rice are snow peas,baby aubergines and sliced carrots. hope you find this useful.

ps: sliced ginger goes very well in fried rice too.sprinkle a little sesame seed oil on top if you can find it, it tastes really good

CHINESE VEGETARIAN FRIED RICE

Serves 2 people



5 dried Chinese mushrooms

2 tablespoons peanut oil

1 tablespoon sesame oil

1 teaspoon finely chopped fresh ginger

1 teaspoon finely chopped garlic

3 cups cooked Kumai Harvest Rice

1 cup bean sprouts

1/2 cup frozen peas and carrots

1/4 cup chopped green onions

3 tablespoons soy sauce

1. Soak mushrooms in warm water for about 15 to 30 minutes. Drain and squeeze excess water from mushrooms.
2. Discard stems and cut mushrooms into thin strips; set aside.
3. In a large skillet, heat oils over high heat and cook ginger and garlic until fragrant, about 1 minute.
4. Add mushrooms and stir fry until hot, about 2 minutes.
5. Add cooked rice, bean sprouts, peas and carrots and green onions; stir to combine. Cook until heated through.
6. Sprinkle soy sauce evenly over rice; toss and serve.

i would suggest you rinse your rice after cooking it. fried rice cooks nicely when its cold. add whatever veggies you want in there. carrots, peas, celery, mushrooms, etc. sparingly, add seseme seed oil into the frying rice. also add a touch of ginger, some garlic salt/powder or fresh, salt, pepper, soy sauce. go lightly to start. if you want to, you can boil the rice w/veggies and the rice will take on some of the flavor of the veggies, then strain and fry. besides the small amount of seseme oil, u will need alittle regular oil in the pan so it doesnt stick. happy cooking :)

Vegetable Fried Rice
Prep: 20 min / Cook: 20 min

Carrots, peppers, cabbage, and mushrooms join forces to help provide a balanced blend of vitamins and minerals that can only be found in a combination dish like this one, which features a variety of power vegetables.

1/4 cup chicken broth or vegetable broth
21/2 tbsp soy sauce
11/2 tsp dark sesame oil
11/2 tbs vegetable oil
2 carrots, peeled and cut into matchstick pieces
1 red bell pepper, seeded and coarsely chopped
4 scallions, thinly sliced (darker green tops reserved for garnish)
2 tbsp finely chopped, peeled fresh ginger
1 cup quartered white, cremini, or shiitake mushrooms
2 cloves garlic, minced
2 cup sliced napa cabbage
1/4 tsp salt
3 cups cooked white rice, chilled

1. In small bowl, whisk together broth, soy sauce, and sesame oil
2. In large, deep nonstick skillet or wok over medium-high heat, heat vegetable oil. Add carrots, bell pepper, white and pale green parks of scallions, and ginger. Cook until crisp-tender, stirring once, about 5 mintures.
3. Add mushrooms and garlic. Cook, stirring occasionally, 5 minutes. Add cabbage and salt. Cook stirring, just until cabbage is slightly wilted, about 3 minutes. Stir in rice and soy sauce mixture. Cook, stirring occasionally, until rice is heated through, about 3 minutes. Slice darker green scallion tops. Sprinkle over rice before serving.

this is vegan recipe, so if you eat dairy and want to add eggs, go ahead.

anyway, cook a pot of white rice (even minute rice is okay)
have whatever veggies you're going to cook, cleaned, cut and ready to put in....
now, get a skillet (or wok if you have one) and heat up olive or sesame oil, balsamic vinegar, and soy sauce. add in the veggies at different times -- obviously the ones that take the longest to cook first --

add in the veggies and keep stirring -- carrots, celery or bok choy, bean sprouts, corn and peas, green and red peppers, onions and garlic......

add spices like cayenne pepper or turmeric, saffron, ginger, whatever your tastes are....
keep stir-frying NOW add in drained rice and keep stirring
a little more soya sauce as you're stirring

RECIPE - SOUTH INDIAN FRIED RICE
INGREDIENTS
-------------------
1. Onion, carrot, potato, cabbage - 1 cup - finely cut
2. spring onion(onion toppings) - 1/2 cup
3. soaked peas - as u like
4. garlic and ginger paste - 1/2 tea spoon
5. rice(basmati preferred) - 1 cup/tumbler
6. oil and salt - as u please
7. spices as u please(small quantity)

METHOD:
-------------
1. Heat the oil in a pan/cooker and add the ginger-garlic paste to it.
2. Then add the spices untill the raw taste in them is gone.
3. Add onion adn fry untill it turn golden color.
4. add the rest fo the vegetables one by one and add 1 or 2 green chillies and fry for a few minutes.
5. add the rice and fry it for 30 secs.
6. for one cup of rice add two glass of water.
7. add salt as u please for the taste and chilli powder

allow it to steam for 5-7 minutes or untill ur cooker whistles for 3 times and remove it off.

cut onions into very small pieces and curd to the onions. add soem salt and pepper and use it like a side dish to the fried rice.

place the fried rice in a round plate. cut a tomato into two slices and place it on the rice and two cjhilles cut in the middle. place them on the sides of the plate.

serves for two.

Makes 4 to 6 servings.

-1/4 c. canola oil
-2 lg. cloves garlic, minced or mashed
-3 green onions, diagonally sliced
-1 sm. onion, sliced
-1 c. bok choy, coarsely shredded
-2 fresh black mushrooms or reconstituted, julienned
-1 c. Chinese snow peas
-2 eggs or egg substitutes
-3 c. cold cooked rice (brown is more healthy)
-3 tbsp. soy sauce, or to taste

Method:

1) Heat wok. Add 1 tablespoon oil and heat. Add garlic, green onions, and regular onions and stir fry until onions are tender. Add bok choy, mushrooms and snow peas. Saute 2 minutes.
2) Remove vegetables. Add 1 tablespoon oil and heat. Add eggs. Stir until set.
3) Remove eggs and break into very small pieces.
4) Add remaining 2 tablespoons oil and add rice.
5) Cook, stirring until heated through. Season with soy sauce.
6) Add vegetables and eggs and toss to mix well.
