Is this for something like a school project?

The Inkas (we spell it with a "C", but in the language of the Inka, it is spelled with a "K") cultivate some 5,000 varieties of potatoes. You can find purple or blue potatoes in many large markets or "healthy" type grocery stores.

Slice those blue or purple potatoes as thin as you can and deep fry them. You will have purple potato chips. you can also do the same thing with sweet potatoes or yams.
