if you put the soymilk in and slowly add the coffee it dont turn into tofu, thats what the curdles are! i know someone that has made coffee tofu before and he makes it into pie! really good stuff, hes the one that showed me to add the coffee slow and stir and if you do that it wont make tofu. you should tell that restaraunt to have hot soymilk for people to put in theire coffee because the hot milk put into hot coffee dont make tofu.

The same reason that you put milk or cream in the cup or mug before pouring your tea or coffee.

TO KEEP THE MUG FROM SHATTERING BECAUSE OF THE HOT TEMPERATURE!!!!!!!

(Yes, the soymilk will curdle if added to the hot drink. But in my experience (almost 9 years worth), it will still curdle if the hot liquid is added to the cold soymilk. Stirring it off and on help. But, that's one reason that I dring soy latte's instead - the steamed soymilk added to hot liquids doesn't curdle.)

it has nothing at all to do with curdling. i add soy to my tea 4 times a day without curdling. only one has it right so far---to avoid cracking the mug! if you find a website for high tea or formal tea, you will see it says the same thing about cow's milk. being from an english household, i was weaned on tea and this i know for a certainty. it's all to save the crockery!

Coffee and tea mugs do not shatter when you pour hot liquid in them. It's what they're designed for.

For some reason putting the soy in first keeps it from curdling

Maybe because if you do that, after pouring inthe coffee or tea, you won't have to waste a spoon on stirring?

If you don't it separates and floats in the hot beverage. Not a good look for your coffee!!

Because it will curdle if suddenly added to hot liquid.
