I wonder if anyone can tell me recipes, non tradional uses for mild italian sausage other than pasta type dishes. I want to make something totally different using this wonderful italian sausage. Thanks for any suggestions.

MY BURRITO:
1 1/2 lbs. Italian sausage, cooked
1 onion, chopped, cooked
1 small can chopped green chilies (optional)
1 package frozen create-a-meal vegetable mix (broccoli, snap peas, water chestnuts, red pepper strips)
1 package chili seasoning mix
3/4 cup water
1 (8 oz.) package shredded cheese (Mexican)
8-10 large flour tortillas
sour cream
In large skillet, cook sausage and onion thoroughly; drain off grease. Set aside in bowl.
In same skilled saute chilies and frozen vegetables until tender; re-add sausage mixture, chili seasoning and water. Mix until blended and heat until bubbly. Place a small amount of cheese on the lower center portion of the tortilla (see directions on package how to wrap) followed by 1/2 cup sausage mixture. Fold bottom up, side inwards, rolling up to top. Place the seam downwards on cookie sheet. Same procedure with remaining tortillas. Bake at 350 degrees for 30 minutes. Serve with sour cream.

Italian Sausage Bread

Ingredients:
1 (16 ounce) package hot roll mix
6 eggs
1 pound bulk Italian sausage. cooked and drained
8 ounces thinly sliced pepperoni
2 cups shredded mozzarella cheese
8 ounces provolone cheese, shredded
garlic powder to taste
1 egg yolk
1 tablespoon water

Directions:
Prepare roll mix and knead dough according to package directions. Cover and let rise for 30 minutes. Meanwhile, scramble eggs in a skillet over medium heat until completely set. In a large bowl, combine the eggs, sausage, pepperoni and cheeses; mix well. Punch dough down. Turn onto a floured surface; roll into a 14-in. x 12-in. rectangle. Sprinkle with garlic powder. Spread filling to within 1/2 in. of edges. Roll up, jelly-roll style, starting with a short side; pinch seams to seal. Place, seam side down, on a greased baking sheet. Beat egg yolk and water; brush over bread. Bake at 350 degrees F for 25-30 minutes or until golden brown. Serve warm. Refrigerate leftovers.

Zuppa Tuscana (like at olive Garden)

3-4 links of sausage, peeled
4 cups chicken broth
1-2 small potatoes diced small
4-5 leaves of kale chopped
1 small onion diced fine
3/4 cup half and half or cream
4-5 cloves garlic mashed or pressed
Red chili flakes (optional)
Salt, pepper

Cook the sausage and break into small pieces. Add onion and lightly saute. Add broth, potatoes, garlic, kale, bring to boil and simmer about 15 minutes. Add cream, salt and pepper to to taste. Add a pinch of chili flakes for zing if you like.

Amounts are approximate as this is my own recipe and I never measure stuff!

Make a Stromboli sub:

Italian Sausage (cut-up)
Roasted Bell Peppers (red & green)
Mozzarella cheese
Tomato sauce
Italian roll

1. Mix the sausage, peppers, and cheese
2. Put in bread
3. Spoon-on some sauce
4. Eat
5. Say, "Mmm, good!"

You could make calzones, pizza, or even chili. I usually default to a pasta dish myself.
