You may use of fresh or canned salmon. Shred the salmon,, add minced onions to taste (the onions should be rehydrated in water for a half hour or less) Add enough seasoned or plain bread crumbs so that the patty will hold together. Add salt pepper to taste or not at all if you dont use salt. Quick fry in a fan sprayed with olive oil. They are delicious. You can also sue a standard dill sauce as a side to go with the salmon patty.

INGREDIENTS:
1 can (16 ounces) salmon
1 small onion, finely grated
2 tablespoons minced fresh parsley
ground black pepper, to taste
2 large eggs, well beaten
1 to 1 1/2 cups fine dry bread crumbs
3 tablespoons butter
PREPARATION:
Turn salmon and liquid into a medium mixing bowl. Flake with a fork, removing OR mashing any bones (they are edible). Mix in grated onion, parsley and pepper. Mix beaten eggs with salmon. Add enough bread crumbs, about 1/2 to 3/4 cup, to make thick enough to shape into 12 small patties.

This recipe has many ingredients but its very easy.
1 lb cooked salmon
1 1/4 cup dry breadcrumbs
1/2 tsp dry thyme
1 tsp dry oregano
1/2 tsp dry mustard
pinch of cayenne pepper
salt and pepper to taste
1 cup mayonnaise
1/2 cup diced onion
1/2 cup diced celery
1 tbs dry parsley
1 tsp Worcestershire sauce
1 egg beaten
2 tbs olive oil

combine 1/4 cup of bread crumbs with the thyme, oregano,mustard, cayenne, salt and pepper.
Mix well, add everything else but remaining bread crumbs and oil.
Form in to 10 cakes. Put remaining crumbs in a bowl and coat each cake evenly. Fry in hot oil until golden brown. About 3-4 minutes per side. Drain on paper towel if needed.

1 can (approx. 7 ounces) salmon
1 egg
1/2 cup Italian bread crumbs
1/2 tsp. salt
1/2 tsp. pepper
1 onion diced
olive oil, enough to cover bottom of skillet
PREPARATION:
Remove skin and bones from salmon; drain well. In mixing bowl, combine with egg, bread crumbs, salt, pepper, and onion. Make patties about 2 inches in diameter; fry in oil until brown on both sides about 10 minutes
Sprinkle salmon patties with salt.

Using canned salmon

One large can of salmon make sure you check for any bones.
Mix with 1 egg, salt & pepper to taste (even better use lemon pepper), 2 tabler sppons of bread crumbs.
shape into paties
brown in skilit that has been heated with just a little drizel of oil.

1 can of Salmon
1 Egg
Saltine Crackers (crushed up)
Salt, pepper, dill, garlic.... whatever you wish

Mix all of it together and fry them in a pan. Use enough saltines to help the stuff all stick together and form a patty. Its sort of like making meatloaf only you are using salmon.

i make mine the same as a crab cake. canned salmon, finely diced onion and green pepper, egg, mayo, a bit of spicy mustard, old bay seasoning ( or JO, whatever you can get where you are ) and some cubed bread. i like mine broiled with a squeeze of fresh lemon juice. stewed tomatoes and mac and cheese go great with them.
