Sweet and Spicy Basil Sauce
8 tablespoons red wine vinegar, divided
1/2 cup sugar
4 cloves garlic, 1 thinly sliced,3 chopped
3/4 cup diced plum tomatoes, seeded
1/2 cup thinly sliced fresh basil
1/4 cup pine nuts
2 teaspoons chili paste (like sambal oelek)
Bring 6 tbsp red wine vinegar and sugar to boil, stirring until sugar dissolves.
Boil without stirring until mixture is deep red, occasionally swirling pan and brushing down sides with wet brush (6 minutes).
Add thinly sliced garlic and cook until garlic is light brown, about 30 seconds.
Mis in tomatoes, basil, chili paste, pine nuts and remaining 2 tbsp of vinegar, simmer for 1 minute.

I'm not sure this is anything close to it, but maybe it will help
Basil Eggplant (Makheua Kaphao)
1 long asian eggplant, cut into thin 2" x 1" rectangles
1/2 red pepper, cut into thin 2" strips
1 clove garlic, minced
3-4 squirts soy sauce
25 fresh basil leaves
Heat a little oil in a wok.
Add garlic and stir fry for 30 secs, then add eggplant, 2 squirts soy sauce, and a little water and stir fry for 2 mins.
Add red pepper, rest of soy sauce, and a little water and cook for 1 min.
Add basil leaves and cook, adding water if necessary, for another minute.
Variations:
In Thailand this is made with 5 or 6 large fresh chilis thrown in with the garlic, so it's spicy.
Be warned: it gives off a pungent, choking smoke!

Here is a basil sauce recipe. hope this helps
1 tb Butter
6 Shallots; thinly sliced
4 Garlic cloves; thinly sliced
1 c Chablis
1 c Clam juice
1/4 c White wine vinegar
1/4 c Heavy cream
1 Lemon, juiced
1/2 lb Sweet butter
- cut into pieces 1/2 bn Basil; stems removed
Salt (to taste) In a medium saucepan place the 1 tablespoon of butter and heat it on medium high until it has melted. Add the shallots and garlic. Saut‚ them for 2 to 3 minutes, or until the shallots are tender. Add the Chablis, clam juice, and white wine vinegar. Cook the ingredients for 15 to 20 minutes, or until it is reduced to 1/4 cup. Add the heavy cream and the lemon juice. Reduce the heat to low and simmer the ingredients for 1 to 2 minutes, or until the liquid starts to thicken. Raise the heat to medium. While whisking constantly, add the pieces of butter one at a time. Strain the sauce into a blender. Add the basil leaves. Pur‚e the sauce and then season it with the salt. Add some water if the sauce is too thick.

first dice one cup of basil really fine, then take one cup of eggplant and put in chopper. since you dont like hot and spicy , try substituting the peppers with honey mustard mix together all ingredients

for this sauce I use tomatoes, onions, pepper, water, a little bit of sprite, mangoe, apples, a little spoon of sugar, and italian seasoning.
ands thats the big secret of the sweet brazilian sauce, sounds really strange but trust me thats the real recipe.

don't add sugar...lol.. go to your local famers market and pick up some sweet basil. try adding scallions, lemon, and roasted garlic to add a more mild flavor to the basil.

I don't like this gourmet type of food. But it is a popular pairing, for those of you who enjoy it. :) I would stuff ravioli w sweet potato and sausage. :) Even crab w cream cheese.
