What is the best, *female friendly* vegan food that doesn't have to be hot, is easy to make, tasty, and will get me rave reviews and a few girlfriends?
PS: I'm just kidding about the girlfriends.

~*~Vegan Cheesecake~*~
"This sweetened tofu recipe is baked in a graham cracker pie crust and served chilled. Try drizzling with a sweet berry sauce for extra color and flavor."

Prep Time:
20 Minutes

INGREDIENTS:
* 1 (12 ounce) package soft tofu
* 1/2 cup soy milk
* 1/2 cup white sugar (depending on the vegan, you may want to use unbleached sugar)
* 1 tablespoon vanilla extract
* 1/4 cup maple syrup
* 1 (9 inch) prepared graham cracker crust

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a blender, combine the tofu, soy milk, sugar, vanilla extract and maple syrup. Blend until smooth and pour into pie crust.
3. Bake at 350 degrees F (175 degrees C) for 30 minutes. Remove from oven and allow to cool; refrigerate until chilled.

You can also add chocolate chips and, or nuts."

* 1 cup white sugar
* 1/4 cup cocoa powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/3 cup vegetable oil
* 1 teaspoon vanilla extract
* 1 teaspoon distilled white vinegar
* 1 cup water

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
2. Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
3. Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

Give the points to Curious Cat or KitKat! I met my late wife at a potluck where I took White bean Hummus & homemade veggie pita chips and 'cemented' the relationship with a pasta salad similar to KitKats! It worked for me anyway.

P.S. Only the meaties would believe you're kidding about girlfriends as you bring the topic up qute often. Ever heard of Greensingles or Veggiedate?

I would say a nice salad. Try making a salad with spinach leaves, madrin oranges, and a sweet dressing.

Or make a nice salad with blue cheese, cranberries, and and candied pecans.

Or you could make a nice pasta salad. Cook some pasta and drain it. Then add things like cherry tomatoes cut in half, olives, artichoke hearts, and anything else that you might like. Then just make an oil and vinagarette dressing to cover it with.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:

Salad:

1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped

Vinaigrette:

1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin

Preparation:

Salad:

Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.

Vinaigrette:

Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Try a corn "salsa" in which you take cooked corn and blend it with chopped red pepper, red onion, a diced jalepeno, cilantro, cumin and lime juice. It's a great side dish.

If you're going to bring hummous, make your own. Try making one with two cans of white kidney beans, two bulbs of roasted garlic, a tablespoon of lemon juice, a few tablespoons of minced fresh sage, a quarter cup of toasted pinenuts and (if it's too thick) the oil you used while roasting the garlic. This hummous is unexpected and has a real Italian flair.

Just off the top of my head I will say a nice green salad. Try adding more unusual ingrediants like baby corn, spinach or sunflower seeds. Pasta salad made with an italian type viniagrette loaded with tomatoes, bell pepper strips, sliced onions, quartered cucumbers.

Mexican wraps: Fill whole wheat tortillas with sliced avocado, strained salsa, sliced onion, fresh tomato and bell pepper strips.
Once made, cut them into halves or quarters depending on size of tortilla for "finger sandwich" sizes.
