1 cup rice
1cup water
1cup chicken broth
1/2 onion diced
2 cloves minced garlic
1 tomato chopped
3 carrots finely chopped
1 cup peas
heat 2 T oil in skillet over med.heat. add rice and saute until lightly brown. add onion and garlic cook until rice is golden brown. add tomato, carrots, broth and water. bring to boil and reduce heat cover and cook 20 min. mix in peas, cook 10 min. until liquid is absorbed and rice is tender.

Spanish Rice

A must with southwestern dishes of all kinds. Simple to make and holds up well in the refrigerator for leftovers.

Makes 4 servings

Ingredients:

2 tablespoons butter
2 tablespoons yellow onions, chopped
1 cup rice, white, long grain
1/2 cup tomato juice
1 cup water
2 chicken bouillon cubes
3 dashes bottled hot pepper sauce
2 teaspoons chili powder
1 pinch black pepper
1 Roma tomato, chopped
2 tablespoons red bell peppers, chopped
2 tablespoons green bell peppers, chopped

Preparation:

In a saucepan that has a tight fitting cover, melt the butter and sauté the onions until soft. Add the rice and stir to coat the rice with butter, then add the tomato juice, water, bouillon cubes, pepper sauce, chili powder, and black pepper.

Stir to dissolve the bouillon cubes and bring to a boil. Once the liquid reaches a boil, reduce heat to its lowest setting, cover, and go away for 25 minutes.

Do not stir, do not look under the lid, do not worry !!

Once your timer goes off, remove the pan from the heat, lift the lid off quickly and throw in the tomatoes, and chopped peppers and put the lid back on quickly.

Do not stir, do not taste, do not worry !! Allow the rice to steam in the pan for 20 more minutes.

Now... If you didn't cheat and if you didn't worry, your Spanish rice should be perfect. Stir in the tomatoes and peppers and serve with a smile. If you did cheat...Well, Shame on you !!!

Here's a recipe I like: start with long grain rice. heat a skillet with 2 tablespoons of vegetable oil. heat the oil and rice til the rice starts to brown. as the rice begins to turn dark, add teaspoon salt, diced bell pepper(if ya want) crushed clove of garlic(if ya want) and 1 small can of tomato sauce. add 2 1/2 cups of water, and bring to a boil. Cover, reduce heat to low and simmer for 25 minutes.(check periodically in case a small amount of water needs to be added,but not too often-don;t wanna keep taking the lid off) After 25 mins, remove from heat, and let sit about 5 mins. Stir and enjoy. I probably should note, this recipe is for 2 cups of rice. Hope you enjoy it as much as I have!

2 tabls. of oil in deep frying pan 2 cups of long grain rice pour intwo hot oil stir around until rice is brown add diced fresh garlic 2 cloves. and 2 bay leaves pour small can of tomatoe sauce and four cups of water to rice and 2 tabls. of powered chicken boulin stir bring to boil untill juice is almost gone then simmer onlow with lid onpan for obout 20 min untill rice is done fluff up rice and eat verry good. enjoy.

1 tbsp tomato boullion
2 tbsp butter or veg. oil

Heat butter/oil in skillet on med heat. when hot add rice, let rice get toasty, when rice smells toasty, add water. as it begins to sizzle add tomato boullion and stir, cover and let cook for 20 min.
Add 1/4 cup diced carrots, corn or green beans while rice is cooking (if you'd like)
