It does not require any batter. pre-season the wings and fry in a deep pan of hot oil.

Fried Turkey Wings

(Yes! Fried Turkey Wings)

(Adjust the amount according to your needs)


8 small turkey wings (middle part only)

8 tbsp. Essence®

2½ c. buttermilk

3 tbsp. hot sauce

Peanut oil

3 c. flour

salt and pepper, if desired


Directions:


Place the wings and 5 tablespoons of Essence® in a plastic bag.

Shake shake shake!

Add buttermilk and hot sauce.

Force out as much air as possible while sealing the bag.

Turn to coat evenly.

Refrigerate overnight.

Heat oil.

(I used a deep cast iron skillet.)

Meanwhile, combine flour, rest if the Essence® and salt and pepper in another bag



Remove the wings from the buttermilk and

transfer to the seasoned flour one at a time.

Shake to coat and remove, shaking to remove any excess flour.



Place on wire rack to rest 20 minutes, unrefrigerated.

(This can be a little messy!)

Preheat oven to 375°.

Add wings to hot oil and fry until golden brown (About 5-6 minutes per side.)

Drain on paper towels.

Season with Essence®.

Place on a baking sheet and bake for 20 minutes or until cooked through.
