Any Latino YA friends out there who can give their favorite special recipes, that are authentic? Please only recipes that you have made yourselves. Thanks.

Oh, lighten up. I also cook Mexican, Italian, Greek etc. all the time. I am Hungarian/Russian. I can give you authenic Hungaria/Russian or the Canadian version. I meant no harm, so go away with you. To gg: I am doing a meat entree and a salad.

Home-Cooked Carnitas - Carnitas Caseras

Ingredients

(6 servings)
4 tb Lard
3 lb Pork, cut into 2-inch cubes
1/2 md White onion, roughly sliced
4 Fresh marjoram sprigs, or scant 1/4 tsp dried
4 Fresh thyme sprigs, or scant 1/4 tsp dried
3 California bay leaves, broken up
10 Peppercorns, crushed
1 Orange, cut into eighths
1 c Milk
Sea salt to taste


Instructions

Heat the lard in a heavy pan, add the meat, and fry, stirring and turning it over from time to time, until lightly golden - about 8 minutes. Add the onion and stir well. Cook for 8 minutes longer or until the meat is well browned (remove onion only if it has burned). Add the remaining ingredients, cover the pan, and cook over low heat until the meat is just tender, not falling apart - about 20 minutes, depending on the quality of the meat. There should be plenty of pan juices. Remove the lid, increase the heat, and fry, stirring and scraping the bottom of the pan, until the juices have been absorbed - about 10 minutes. Drain off the extra fat and serve.

I cook 80% mexican food in my home. How much time do you have to cook? Most of the recipes take a long time.

What do you need to make? Appetizer? Meat? Salad? Drink? Dessert? Are you doing it all on your own?

Boil some roast beef -shred it up and make tacos or enchiladas mmmmm...Or burritos with refried black beans and if you really wanna kick it up a notch you can fry the burrito and make a chimmichanga

So, far I agree with gg --- however, it is a crappy perception that you need "Any LATINO" YA to give an 'authentic' recipe!! I have lived in the Southwest all my life - am a wonderful cook (YES, Mexican dinners too) and I am not hispanic.
