Chicken Cacciatore
1 Boiler/Fryer, Cut Into 8 Pieces (About 3-4 Pounds)
2 Tablespoons Olive Oil
1 Medium Onion, Chopped
2 Cloves Garlic, Minced
1 Celery Stalk, Chopped
4 oz. Mushrooms, Chopped
1/2 Cup Dry White Wine
1 (14 oz) Can Chopped Tomatoes
1/2 Cup Chicken Broth
1 Teaspoon Dried Oregano
1/4 Cup Fresh Chopped Parsley
Salt & Pepper
Pinch Of Red Pepper Flakes
Rinse the chicken pieces, and then pat dry. Heat the oil in a large skillet over medium heat, and brown the chicken pieces well on both sides. Remove the chicken pieces to a plate. Add the mushrooms, onions and celery to the pan drippings, and sauté until soft, about 5 minutes. Add the garlic, and cook another minute or two. Add the chicken back into the skillet, and add the white wine. Cook on medium heat until it has almost completely evaporated. Add in the chopped tomatoes, broth and seasonings. Simmer, covered for about 30 minutes. If the sauce has not thickened, remove the chicken pieces from the pan, and bring the sauce mixture to a boil. Cook a few minutes until it has reduced and thickened. Serve hot!
Variation: You may add some small tasty black olives to the chicken and sauce mixture in the last minute or two of cooking.

Chicken Cacciatore
* 1 broiler-fryer chicken, cooked, or about 3 cups cooked chicken
* 1 large can (28 ounces) crushed or diced tomatoes
* 1 can (6 ounces) tomato paste
* 1 cup chopped onion
* 1 large green bell pepper, chopped
* 4 to 8 ounces sliced mushrooms
* 1/4 cup fresh chopped parsley
* 1 1/2 teaspoons garlic powder
* 1 teaspoon dried leaf basil
* 1 1/2 teaspoons dried leaf oregano
* 1 can chicken broth
* hot cooked spaghetti or other pasta
Cook chicken in seasoned water or broth until done; drain. When chicken is cool enough to handle, remove chicken meat from bones and cut in pieces.
While chicken is cooking, combine tomatoes, tomato paste, onion, bell pepper, mushrooms, and parsley in a large pot. Stir well and add garlic powder, basil, and oregano. Cover and bring to a boil; reduce heat and simmer for 45 minutes. Add chicken broth as needed to thin sauce. Add cooked chicken and simmer for 20 to 30 minutes longer.
Serve chicken cacciatore over spaghetti or pasta.

brown half onion in olive oil(just lightly browned more like honey)
set aside onions> then brown chicken evenly on both sides with garlic and salt and pepper>once chicken is nicely seared add half can tomatoes with onions sliced green peppers and freshly sliced mushrooms. add some basil and simmer for approx 20 mins turning every so often. transfer contents to a baking dish and cover with remaining canned tomatoes season with salt and pepper to taste and if you like a little spicy add crushed chili peppers. bake in oven approx 20 mins ( sprinkle with parmesan cheese during last 5 mins of baking. serve over any pasta or rice and enjoy.
