Since it is a brunch I would do a couple egg casseroles, bagels with cream cheese and different jellys, pastries, doughnuts, juices, coffees, tea. bacon, sausage, etc.

For the perfect combination of eggs, sausage, bread and cheese, this is the dish to try. My mom and I like it because it bakes up tender and golden, slices beautifully and goes over well whenever we serve it.

Sausage and Egg Casserole

INGREDIENTS
1 pound bulk pork sausage
6 eggs
2 cups milk
1 teaspoon salt
1 teaspoon ground mustard
6 slices white bread, cut into 1/2-inch cubes
1 cup shredded Cheddar cheese

DIRECTIONS
In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage. Pour into a greased 11-in. x 7-in. x 2-in. baking dish. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 40 minutes or until a knife inserted near the center comes out clean.

This dish is perfect for potlucks because it looks so pretty on the table and, best of all, it can be made ahead of time. Although I don't live in the country, my family and I love the country flavor of this hearty egg casserole."

Cheesy Egg Casserole

INGREDIENTS
1 pound Monterey Jack cheese, shredded
1 tablespoon all-purpose flour
2 cups shredded sharp Cheddar cheese
1 pound sliced bacon, cooked and crumbled
12 eggs
1 cup milk

DIRECTIONS
Toss Monterey Jack cheese with flour; place in the bottom of a greased 13-in.x 9-in. x 2-in. baking dish. Top with cheddar cheese; sprinkle with bacon. Beat eggs and milk; pour over all. Cover and chill 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 325 degrees F for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before cutting.

I would serve an egg casserole dish (try bettycrocker.com). Most need to be prepared the night before and refrigerated, then just popped into the oven. The ingredients are filling, healthy and cheap.
Compliment that with a spinach, cucumber and bacon salad.
Offer white and wheat rolls with butter, honey and cream cheese to spread.
Finally, a two-layer coconut cake. Use just a regular box of white cake mix topped with vanilla or cream cheese frosting and sprinkle coconut all over the tops of the frosted cakes before assembly.
To drink, Mimosa (OJ and champagne - you can use $5 champagne for this) or GingerAle for adults, OJ with a Maraschino cherry in it for kids, and coffee/tea.
This should be ample provisions for a light affair. I estimate that you will spend no more than $50. on this.

If it were me, for brunch i prefer sticking more to the br than the unch, make some quiches, basic bacon egg + cheese, spinach egg +cheese, and then just put out some fresh pastries, like croissants, turnovers, or danishes. Those things will keep it cheap, ez, and tasty!

sour dough bread and spinach dip is always a hit . just hollow out a round sour dough bread in little chunks and fill with spinach dip you can get it ready made at your local deli .
and a big punch bowl full of red punch with sherbet in it i mean sherbet ice cream scooped in it
and some turkey and cheese finger sandwiches
i know it sounds odd but these things are always a hit.

CREAM CHEESE AND JAM FOLD-OVERS

1/4 c. warm water
2 pkg. dry yeast
3/4 c. warm milk, scalded
1/4 c. firmly packed brown sugar
1 1/2 tsp. salt
1/2 c. butter, softened
1 egg, room temperature
4 1/2 c. flour, about
1 (8 oz.) pkg. cream cheese, softened
2 tbsp. cold milk
6 tbsp. jam or preserves

Measure warm water into large warm bowl. Sprinkle in yeast; stir until dissolved. Add warm milk, brown sugar, salt, butter, egg, and 2 cups flour; beat until smooth. Stir in enough flour to make stiff dough. On floured board, knead 8-10 minutes. Set in greased bowl; turn to grease top. Cover; let rise in draft-free warm place until doubled, about 1 hour.
Punch down. Roll to 24 x 12 inch rectangle. Cut into 4 inch squares. Beat cream cheese and cold milk; spoon 1 tablespoon on center of squares. Top with 2 teaspoon jam. Overlap 2 opposite corners; seal. Set on greased cookie sheet. Cover; let rise until double. Bake; frost with confectioners sugar glaze, if desired. Refrigerate leftovers. Bake at 375 degrees for 15 minutes or until done.




Seven Layer Dip

INGREDIENTS
1 (16 ounce) can refried beans (traditional variety)
1 (4.5 ounce) can chopped green chiles, undrained
1 tablespoon fresh lime juice, plus
2 tablespoons fresh lime juice for avocado layer
2 teaspoons chili powder
1/4 teaspoon ground cumin
Salt
3 avocados, halved, pitted, flesh spooned out
1 cup sour cream
1/2 cup mayonnaise
1 cup salsa (drain to equal 1 cup if salsa is especially runny)
3/4 cup sliced canned black olives, drained
1 cup grated pepper Jack cheese
1/2 cup thin sliced scallion greens, green part only
DIRECTIONS
Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a small bowl. In a second small bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a third small bowl, mix sour cream and mayonnaise.
Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of a 9-inch deep-dish pie plate or similar size pan. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.




russian potato salad

INGREDIENTS

2 medium Yukon gold potatoes, boiled, peeled, and chopped
3 medium beets, boiled, peeled, and chopped
2 medium carrots, minced
1 cup fresh green beans, briefly blanched, and chopped
1 cup fresh or frozen green peas (briefly blanched, if using fresh)
1 cup chopped fresh dill
1 cup Basic Balsamic Vinaigrette (see below)
Sea salt, to taste

1. In a large bowl, toss the vegetables, chopped dill, Balsamic Vinaigrette, and salt together.


Apricot Honey Ham Glaze

Spoon ham glaze over ham and baste during last 30 minutes of baking time.
INGREDIENTS:
1/2 cup apricot preserves
1/2 cup honey
1 tablespoon cornstarch
3 tablespoons lemon juice
1/4 teaspoon ground cloves
PREPARATION:
Ham glaze directions
Combine all ham glaze ingredients in a saucepan over medium heat. Heat, stirring constantly, until thickened and bubbly. Spoon ham glaze over ham and baste during last 30 minutes of baking.
Makes 1 cup of ham glaze.
