How about something homey and comforting like Tuna Casserole w/ salad and garlic toast? or if you want to go more ethnic make Picadillo, if you don't have any pork, ground beef is great in it. Picadillo is a cuban dish served w/ rice and black beans w/ salad. Yummy! and Easy! you probably have all the ingredients in your pantry and fridge. Meat, onions, garlic tomatoes etc.

Anything baked is easy- try salmon wrapped in foil in a 450 degree oven for 20 plus minutes (depends on how thick your fish is)- You can coat the top with chipotle salsa and mayo for a spicy kick. So easy to make. My guests raved about it when I served it on a platter at a dinner party.
