In the Pennsylvania Dutch tradition, you are supposed to have 7 sweets and 7 sours on the table at every meal except breakfast. The sours are usually several types of pickles. Could be a two or three of types of pickled cucumbers, chow-chow, bean salads, pickled watermelon rinds, etc. as well as cucumber salad, cole slaw or that kind of thing.

1) Sour plum - preserved & dried.
2) Plum powder - use to make a cool drink in the summer.
3) Apple cider vinegar/ vinegar of some sorts.
4) Preserved sour mustard vegetables - use in many chinese cuisine, ie. the infamous Szechuan fish fillet sour mustard soup, OR with stir fry meats.
5) Preserved dikon - with carrot shreds, a salad commonly served as an appetizer in any Cantonese cuisine restaurants.
5) Unripe mangoes/papayas/other unripe fruits - used in many Asian salads/stir frys.
6) Tamarind concentrate/paste - use for cooking in many Asian cooking. ie. Tomyum soup in the Thai cuisine, spicy stir fry for other S.E.Asian cuisines.
7) Others : Sauerkraut relish, pickles
