Hey if you live near a Taco Bell go get a Caramel Apple Empanada! Man, they are too good, they are dangerous, addictive!!! My niece got mad at me because I got her hooked on them, her family did Empanada runs... and gained some weight!
I could go for 2 C.A. empanadas and a big bowl of Blue Belll Homemade Vanilla right now! Awesome
but I would like to try the ones that have meat in them, they sound good too! Just haven't found a restaurant that has them on the menu yet...

Esperanza's Cafe (Joe T. Garcia's Bakery)- Fort Worth, Tx
Makes: 16

Pumpkin Filling
1 (15 oz.) can pumpkin
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon, optional
1/4 teaspoon ginger, optional
1/8 teaspoon cloves, optional
Empanada Dough
1/3 cup water
1/4 cup sugar
1 teaspoon salt
2 (1/4 ounce) packages dry yeast (4 1/2 teaspoons)
1/8 teaspoon baking powder
2 generous pinches cinnamon
3 cups flour, divided in half
generous 3/4 cup vegetable shortening
I N S T R U C T I O N S
For filling: Mix ingredients together and set aside.
Preheat oven to 350 degrees F. Combine water, sugar, salt, yeast, baking powder, and cinnamon. Using an electric mixer, gradually blend in half of the flour. Add shortening and thoroughly mix, then gradually blend in remaining flour.
Divide dough into 4 equal parts, ten shape each into 4 dough balls. Slap the dough balls between the palms of your well-floured hands until somewhat flattened, then roll on a floured surface until circles approximately 4 inches in diameter and 1/8 inch thick.
Put about 1 1/2 tablespoons of filling in the center of each circle, fold over, and seal edges by pressing lightly with a fork on both sides.
Bake on greased cookie sheet until golden brown, 18 to 20 minutes (watch carefully; they can burn quickly).

Empanada is a pie from Argentina. In that country they eat empanadas with meat stuffing, spinach stuffing or fis stuffing during the Easter Holiday. As a matter of fact, they have some pasta-pizza-empanadas factories. The taste is very good. They cooked oven bake or deep fry. Either one is very tasty.

The Spanish empanadas are from Galicia and usually have a tuna or beef stew filling between layers of a type of dough and are baked. I'm not sure where they originate from though, the Americas or Spain, however, the word definitely comes from Spain. Empanadillas are small circles of dough folded over a filling and fried.

an empanada is like a pie, it can be baked or fried and filled with sweet or savory filling. the dough is cut into a circle and the filling goes on the side and you fold over the dough to make a moon shape and you pinch the edges with a fork. you can also brush with egg wash so they can brown a bit. i love to make mine with peach and mango preserves or pineapple topped with powdered sugar or the traditional way with cinnamon sugar.

It's sort of like a calzone. It's a dough that is stuffed with whatever you want, basically, then baked. Traditionally it is stuffed with a meat and/or cheese filling. When I was growing up, my grandma would go to this mexican bakery and get all different kinds of sweet breads and one of them was either a sweet potato or pumpkin empanada that was shaped like a pig. It was so good!!!!
