Authentic Lumpia

2 lbs hamburger
1 cup bean sprouts
1 small head of cabbage (finely chopped)
1 onion (chopped)
1 grated carrot
4 garlic cloves (finely chopped)
1/4 cup soy sauce
lumpia skins

Mix all well in a large bowl. You can find lumpia wrappers from an oriental store, These work best ( about the size of a dinner plate and round) allow mix to sit for a while. Put a small amount of mixture into middle of wrapper and roll up and fold in the edges. Wet down with a little water. fry until golden brown, serve with sweet and sour , or some crushed garlic with vinegar.

Hi there Tony N!!! Pansit Canton is just another version of cooking Noodles. Stir fry all ingredients (vegetables & meat) you fancy when everything is cooked add your Pansit Canton - one or two packets will do to serve four to six people.

Lumpia ? What kind you prefer? Have you heard of
Fried Lumpia; Fresh Lumpia; Lumpia Shanghai and then the vegetarian lumpia

EASY LUMPIA WITH DIPPING SAUCE

Ingredients:

1 lb ground beef
2 cloves garlic
1 large onion
1 can (8 oz.) water chestnuts, slivered
2 pkgs (10 oz. size) chop suey vegetables.
1 1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon patis
2 tablespoons flour
1/4 cup water
40 lumpia wrappers
deep fat for frying
3 cloves garlic, minced
1/4 cup vinegar
1/8 teaspoon salt


Procedure
Brown beef well. Stir in garlic and onion; saute lightly. Add water chestnuts, vegetables and seasonings; cook for about 2 minutes. Drain and cool throughly. Combine flour and water to form thin paste. To make rolls, place 2 tablespoons filling on a lumpia wrapper. Fold neatly like and envelope. Seal with paste. Head deep fat to 375 degrees F. Combine remaining ingredients for sauce. Fry lumpia in hot fat until golden brown. Serve hot with sauce. Makes 40 lumpia.

Lumpia is a phillipine dish which is terrific. I use egg roll skins. In a saute pan, brown hamburger meat with onions, add shredded cabbage, salt,pepper and bean sprouts. Roll into wrappers and deep fry.

Here is Pancit Canton (yum):

1 chicken breast
1/2 lb. pork (cubed)
4 cups water
2 tbsp cooking oil
1 tbsp minced garlic
1/3 cup chopped onion
1 tsp salt
1/2 tsp salt
1 tsp black pepper
1 cup snow peas
1 cup cabbage (sliced in 1 in. strips)
1 cup carrots (1/2 inch diagonally sliced)
1 cup celery (sliced)
1 tbsp soy sauce
cantonese noodles
1/4 cups scallions or green onions for garnish (cut in 1/2 inch strips) (optional)

In pot, boil chicken and pork in 3 and 1/2 cups water and 1 tsp salt. When tender (about 45 minutes), remove from pot and slice chicken into small pieces--about 1/2 inch strips. Reserve 2 cups of broth (if chicken only) or 2 and 1/2 cups broth (if chicken and pork).

In frying pan, heat oil and saute garlic until light brown. Add onion and cook until transparent. Stir chicken (and pork) and add 1/2 tsp. salt and pepper. Simmer for about 15 minutes. Add reserved broth and vegetables. Season with soy sauce and simmer for about 3-5 minutes (until tender but crisp). Add noodles and cook until it's done (about 5 minutes). Top with scallions. Enjoy!

Ingredients:
1 pound ground chicken or turkey
1 pound ground pork
1/2 pound shrimp -- shelled and cut small
2 medium potatoes -- peeled and diced small
2 medium carrots -- peeled and diced small
1 pound green beans -- trimmed and cut small
1/4 pound bean sprouts
1 small cabbage head -- shredded
2 cloves garlic -- minced
1 medium onion -- diced
30 egg roll skins
msg -- to taste (optional)
1-1/2 cups vegetable oil -- for frying

Instructions:
Brown meat and chicken in pan (no water of grease). Remove from pan. Brown garlic and onion in butter; add shrimp and salt. When shrimp is pink, add meat and chicken. When meat is cooked, add beans. When beans are soft, add potatoes and carrots. Cook till tender, then add cabbage and bean sprout last. Cook for 5 minutes. Add salt and MSG (optional) to taste. Drain before adding to wrapper. With wrapper corner toward you, place 2 to 3 tablespoons cooked mixture in wrapper. Roll into tight roll and seal end with a water-flour paste. Fry rolls in oil till brown over medium-medium high heat. Drain on paper towels.
Amounts can be adjusted to your tastes. May substitute two 14 oz. cans of French-style beans for the fresh green beans. Potatoes and carrots may be shredded instead of diced. May substitute canned bean sprouts for fresh.

Lumpia Sauce

1 clove garlic -- crushed
1/2 cup brown sugar
1/2 cup soy sauce
1-1/2 cups water
4 tablespoons cornstarch
1/3 cups cold water
1 tablespoon vegetable oil


Mince the garlic and mix the cornstarch into the 1/3 cup water.
Heat the oil in a medium saucepan on medium heat; add garlic and saute until softened. Stir in brown sugar, soy sauce and 1-1/2 cups water. Slowly add cornstarch mixture stirring constantly until thickened.

Makes 4 cups.
