I have a vegetarian cookbook that suggests the five-ingredient method. That's the great thing about this kind of food, you don't really need a lot to make it work. Here's one I like:

2 onions, sliced
1-2 cloves garlic, diced.
2 boiled or baked sweet potatoes, sliced into rounds
1 tomato, diced
1 cup lima beans

Brown the onions & garlic. Add the sweet potato slices, let brown. Add the tomatoes, & let brown. Finish with the lima beans and a cup of water. Let it simmer for a half-hour or so. Serve as is or with brown rice or couscous.

Egg Plant is a great ingredient to use in place of meat in some dishes. Try Egg Plant Parm with marinara sauce and a side of pasta, or you can stuff egg plant with a chopped veggie stuffing and bake it. Also all sorts of pasta are wonderful. There are tortellini, and cheese ravioli that are wonderful main dishes. They can be served with a red, pink, white sauce or oil butter and garlic and be a real meal.

a dish my mother made was great, fry up sliced onions, cook wide noodles and yes cut up cabbage. When the onions are done, throw in the cabbage and cook both, when they are "heated" throw in the noodles and lots of butter, now cook for about 5-10 minutes. the cabbage does not taste like you would think. the meal is called Haluski, and everyone loved it

Hey there! Oh my goodness! I had this same problem, my hubby is a vegetarian and I had NO IDEA what to cook for him. Try this brand, Quorn Naked Cutlets, and use them in place of chicken, you can make any chicken meal with them, and they are super tasty too!

Everything I've tried is easy to make, tastes wonderful and looks good. Even my non-vegan friends enjoy these meals and snacks.

If you eat dairy, vegetarian lasagna or spinach ricotta cannelloni is always a safe bet.
If you're a vegan, how about a bean burrito with guacamole and salsa?
