not anything cooked or cali. roll!! i ve already tried those also dessert sushi!! thanks ^_^

Here are my recommendations in each category, both cooked and uncooked:

Nigiri Sushi (rice with the fish on top; 1 order = 2 pcs):

1. Hamachi / yellowtail - My favorite. Very mild. Does not taste "fishy" at all.
2. Unagi / freshwater eel - Broiled; sweet and tastes NOTHING like fish. I highly recommend this one.
3. Maguro / tuna - Mild. My 5 and 8 yr old daughters' favorite.
4. Sake / fresh salmon - Mild.
5. Ebi / shrimp - The shrimp is cooked just like in shrimp cocktail.


Maki (Rolls; 1 order = 6 to 8 pcs)

The names depend on the restaurant, but here they are with descriptions:

1. Dynamite Roll - Spicy hamachi and rice wrapped inside seaweed.
2. Rock N Roll - Unagi (freshwater eel) and avocado wrapped inside seaweed.
3. Rainbow Roll - Assorted fish atop California Roll and avocado (I know you said no Cali Roll, but this is TASTY!)
4. Crunchy Roll - Tempura Shrimp, cucumber, avocado wrapped inside rice and drizzled with teriyaki sauce, depending on the restaurant.
5. Spider Roll - Fried soft shell crab and cucumber wrapped inside rice.


Temaki (Hand roll; ingredients inside a square piece of seaweed wrapped to look like a funnel; 1 pc):

1. Salmon Skin - Salmon skin, julienned carrots, sprouts and cucumber. Some restaurants use fresh salmon skin, some use packaged. The fresh is always tastier.
2. Spicy Hotate / spicy scallop - Spicy hotate, sprouts and cucumber.

My recommendations for sashimi (raw fish only, nothing else) is similar to my recommendations for sushi:

1. Maguro / tuna
2. Hamachi / yellowtail
3. Sake / salmon

Stay away from:

1. Saba / mackerel - It is fishy.
2. Uni / sea urchin - Definitely an acquired taste and for VERY seasoned sushi eaters. I don't like it at all.

Try, just because it's fun to eat:

1. Tobiko / flying fish roe - Very small fish eggs atop seaweed-wrapped rice. Fun to chew the little eggs. Another favorite of both my daughters.

Try, when you're feeling adventurous:

1. Shrimp Boat - Rice with butterflied shrimp on top with uzura (quail egg) on the shrimp.

I can list more in each category, but I think those listed will make your taste buds happy!

I like the baby octopus the most....how its prepared varies by the sushi place but many prepare it with eel sauce which is yummy. Rainbow rolls are another fav which contain salmon, tuna, shrimp, and avacado. Remember not all rolls are created equal every chef does things different. Spicey tuna rolls for example vary from shop to shop....theres a place in pittsburg that has the best but thats another answer.

Sushi is great; I started with Salmon and Tuni, (spicy tuna) I was pleased and I just love it so much. As someone new to the world of Sushi, you may want to try these first. Have a great day!!

Tekka Maki. This is simply tuna wrapped in sushi rice and seawood. For a variation on this basic roll, try adding a little cream cheese in the roll.

Toro is not known to novices. It is a buttery smooth tuna that does not have a very strong fish taste.

If the idea of raw fish intimidates you start with a California Roll. It is a great introduction to the world of Sushi because it uses cooked crab. If you are okay with raw fish, the others recommndation of Tuna and Salmon are great choices along with Ebi (raw Shrimp) as it is very similar to cocktail shrimp.

Crab, salmon or tuna are good introductory sushis. Your best bet is to just get a platter/sushi boat and go nuts!

For beginners, it would probably be best to start out with norimaki (the sushi that comes in rolls) as they are easier to handle. There are a number of great ingrediants for these such as salmon and toro (a type of tuna).

If you realy want to be daring, ask for the chef to pick for you.

Salmon roll, or Philadelphia, its a smoked salmon with cream cheese, not raw but very very delicious, definitely Tuna roll also! OH the endless possibilities, they are ALL good!! You should try all but remember, a little wasabi can do no harm (:

I love salmon. The only one I don't like is octopus because it's a little tough, although the flavor is good. I'd start with salmon. You'll love sushi, I bet!

i dont think you can beat good tuna. in fact, i wont eat tuna that has been more than seared on the outside. my other sushi favorites include flying fish roe, eel, and salmon, ask the sushi chef what he recomends that day and eat that.
