If you are in the Los Angeles area you might try Guelaguetza (they have 2 branches in the L.A. area). They've got killer mole' and pozole. They even serve crickets (yes, the insect)- oaxacan style!
Check out their menu:

If you can't find a real mexican food restaurant in California, then you need glasses. Corn Tortillas are the original. Flour is a recent addition to mexican food.

International Blvd. in Oakland and the Mission in S.F. have countless authentic Mexican restaurants. Even the taco trucks are good.

Where in California? In the East Bay, San Francisco area, in Albany, there is Montero's cafe, and also everyone seems to like Juan's place in Berkeley.

California is a big state, you might want to narrow your search. In Sacramento there is a place called adalbertos that is really good as well as centro cocina mexicana. In the bay area it's all asian so dont even try.
Down south should be no problem being that Mexico is not too far away.

Although I agree with the small places, you might want to post the county you live in and I'm sure there will be MANY answers for you. Look at were hispanics eat themselves, that's ususally the place to go and always on a Tuesday!!!
