its real simple. to start, try taking out the meat of pre-made meals. I went through what I called a 'weening' period where I bought Boca burgers and chikn nuggets (fake meat). But don't stay on them too long because they have textured soy protein which is really unhealthy and the key to being a vegetarian is all about health. this site should help you out with recipes and stuff. http://www.vrg.org/ and this one. http://www.vegsoc.org/. Try making stir-fries, and pastas, and you can even make some rice and just add vegetables and salt to it. its pretty good. Since, I'm just 16 my mom still cooks for me, but when we have family barbecues (my aunts a vegetarian too) we just go to Whole Foods, or a local health store and get samosas or lentil burgers. Just remember to get protein from beans, eggs and other dairy products. Great benefits to being a vegetarian include, lower cholesterol, less risk in developing heart disease and diabetes, and other serious illnesses related to poor diet from meat because of the saturated fat. Its an overall healthier way of life that protects the environment and the animals. The only reason I can think of for not being a vegetarian is laziness.

Here is a great recipe that I love. It is really easy and can be frozen if you have left overs.
Cheesy Pasta Bake
Ingredients (use vegan versions):
1 box Mori Nu tofu, extra firm
enough pasta to fill an 8x8 pan (hand full)
8 ounces of your favorite marinara
1/2 block of vegan gourmet mozzarella
spices: parsley, basil, garlic
optional: cayenne
Directions:
Cook the spaghetti halfway. You don't want it to be mushy once you bake it.
While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.
Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.
Then, grate your mozzarella. Use 1/3 to 1/2 of a block of vegan gourmet mozzarella. Put aside.
Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.
Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.
Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.
Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.
It's important to spray the top of the cheese with your Pam or other oil spray. This makes the cheese on top melt smoothly and have a golden color when it's done.
Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.
Serves: 4
Preparation time: 30 minutes
You could also add some black olives and some mushrooms, or other veggies that you like.

For one don't go completely cold turkey, you're body might not be able to compe with the sudden withdrawl of meat if you're currently the 'meat and potatoes every day' type of person.
Some easy recipes though - you could try heaps of different pastas, risottos are another good one and stirfries too.
Make sure you mix it up though because otherwise you'll get bored and probably wont get all the nutrition you need (ie. protein, iron, etc.)
You can try the alternative meat (ie. not bacon) some are pretty good (although my meat eating friends said the cardboard probably tastes better and it wasn't until about 4 years into being vego I got used to alot of soy products. (Speaking of soy, if you're cooking tofu - kill it til it's dead, it tastes HORRIBLE when it's semi cooked, it's like slush, yuk!)
If you're still looking at eating fish than that's alot of problems already solved. (I don't eat fish though but hey, each to their own)
My favourite quick and easy recipe is a greek salad -
chop cucumber, tomato and red onion (I skip onion but it's originally in there) and place in a bowl. Put in a handful of spanish black olives and mix. Drizzle over the top with a vinegar/ oil based dressing (vinegrette or balsamic dressing should be ok, I use my mum's homemade)

What do you eat normally? I would hope that not every single thing you eat has meat in it! People say they've never eaten "vegetarian food"....look back at what you eat in a day. Then build on the things you ate that didn't involve meat.

well, i'm not a vegitarian but... i like plain squash. nothing fancy. buy a butternut squash or an acorn squash, cut it in half, put it in a microwave safe, deep dish, put about a cup of water in the bottom of the pan. pour about a 1/4 cup of extra virgin olive oil in each half of he squash (ps... clean out the seeds first) then use a basting brush to coat the meat of the squash with the oil. cover with wax paper (press and seal works best) and cook on high in the microwave for about 20 minutes. don't forget to turn the turntable off!
then, enjoy!
oh... just scrape the meat of the squash off the skin. don't eat the skin...

Either that or just cook the usual but don't put an animal inside.
Quorn makes a handy substitute for chicken as it looks and feels like it, also doesn't have any taste.so the connection is uncanny

I'm thinking of cutting meat out of my diet too. But I already eat so little of it. I would start to eat things like salads and nuts-eat fruit and vegs and just some of the thing you use to eat with meat, just not meat.

One of my favorite veggie dishes is called vindaloo. It is made with spinach and cheese. Here is my recipe:
1 onion(minced), 1 clove garlic(minced), 1 can diced tomatoes, 1tsp curry powder, 1tsp smoked paprika, 1tsp cumin, 1TBS cayenne pepper, 1tsp ground black pepper, 1/4 lb butter, 1tsp cinnimon, 1tsp hing(an indain spice), 1 can coconut milk, 1 box frozen spinach, 1 pound of panella cheese (cubed)
Melt the butter
Add minced onions and garlic and sweat until translucent
Add spices and cook on low for 5 minutes
Add tomatoes and cook on low for 20 minutes, stirring ocasionally
Add coconut milk and cook on low for 20 minutes, stirring ocasionally
Add frozen spinach and cook on low for 20 minutes stirring ocasionally
Add diced panella to mixture. give a quick stir and serve in bowls with toasted pita slices
