That is an oversimplification. It is in fact cream, and it is in fact sour, but it's a controlled fermentation. Basically, a specific strain of bacteria is cultured and introduced into heavy cream. This specific strain produces lactic acid and other compounds, which lend a pleasing acidity which we perceive as sour.
