Hi!
THE famous French Mushroom is called Truffle(s).
Truffles are a mushroom that grow from spores, but slightly differently form their 'above ground' counterparts, they grow under ground, near the topmost roots of conifer trees.
Thay can be found in many countries, including the USofA.
They have a very pungent, but delicate flavor, and can run anywhere between 95 dollars per OUNCE, to 250., or more, depending on how fresh they are, where they were grown, and who's selling them.
They are very exotic, and are highly sought after in high societies'
"Cirque Gastronomique". I have used them in dishes like foie gras stuffed quail (Tiny bird stuffed with fatted duck liver), with sea scallops, venison, and they even make mashed potatoes taste like Heaven! Because Truffles are so expensive, they can be added as an oil to many dishes, the oil (in an assortment of quality levels) is available to the ordinary chef for about 75-80 dollars per liter.If you like mushrooms (not the hallucinogenic type!) and enjoy experimenting with new dishes, try finding a tiny bottle of truffle oil. Add 3-4 drops to your favorite recipe(the oil is very concentrated, a little goes a long way!) of mashed potatoes, or add a few drops to your steak tips, and wow, will you know you've experienced the fare of Kings !

not just french - truffles can grow in other places!

they use pigs because pigs have a better sense of smell than dogs

however, they need to pull the big back because the pig will go crazy trying to dig up the mushroom to eat

your'e right about the other details,but this exotic mushroom is called TRUFFLES ,just missed out an L & that's not too bad ..

white truffles are italian.
