Döner and Gyros are flat pieces of meat and a little minced meat speared up and roasted before an open fire. 4 two 5 layers meat with little fat then one that is more fatty. The browned crust is cut and sold as Döner or Gyros. Döner is Turkish: "he/it turns around", Kebab "grill". In Turkey the meat is often lamb or mutton.

Döner meat is the brown crust of veal that has been roasted
next to a gas fire (nowadays). It is normally veal - but it can be other meat that is eaten by Muslims (AFAIK no horse or donkey - You can have a look into the Bible - the food laws are AFAIK the same for Muslims - lol) ; It can be e.g. from poultry but then You are told that it is "Geflügel" or whatever the local language calls it. Döner is the Turkish name for this brown meat roasted before the fire. Döner was first popular in Berlin. Ther Döner is a piece of warm white bread with the Döner meat and salad. It is a carry away dish. Döner is never made from pork.

Gyros (Greek, Greeks are Christians and eat pork) is the same type of brown meat crust when it is cut from pork. The word also means turning. It is sold on dishes with other Greek food and salad. It can be lamb instead of Pork with receipes from certain areas in Greece. Similar meat dishes exist in a number of South East European cuisines.

So I assume that we have all eaten something similar to Döner meat in a Serbian, Bulgarian ... restaurant or as a Donner Kebab.

Ingredients:
1 (2 ½ - 3 pound) Lamb Leg (boned & cut in slices)
3 pounds Ground Lamb
3 cups Onions (processed to a liquid)
1 large Tomato
1 Egg
1 tbsp. Black Pepper Powder (Pisi Kaali Mirch)
Salt (to taste)
Lamb Fat (2-3 pounds)
1 cup Olive Oil (Zaitoon Ka Tail)

Preparation:
Remove any bits of skin and bone from the lamb leg. Cut it into serving-size slices, about ¼ to ½ inch thick. Pound it with a meat tenderizer or the edge of a heavy saucepan until 1/8 cm. thick and trim.

Prepare a marinade out of the onion juice that was processed from the onion. To this add: olive oil, salt and pepper, and soak the meat in this marinade overnight.

Spread the lamb fat over each piece of the meat, and ground lamb mixed with an egg. Thread pieces of meat on a long skewer, starting with the larger pieces. Trim the chunk of meat on the skewer and add trimmings to the end of the skewer. The tomato is put on the skewer whole at the end.

COMMENTS: Most of the answers insist on doner kebab being a filthy meal. The fact is, ANY food you buy outside is bound to be so. Do you think a big mac is actually good for you? These restaurants need to make profit. If you want to eat healthy, cook your own food.

It's thinly sliced beef, veal, lamb, chicken or goat meat. In Greece (gyros), it might also be pork. The thinly sliced meat is pressed together to form the traditional shape of the döner. If it had a lot of fat in it, it would disintegrate during the cooking process.
As to its containing unmentionable parts of the animal, this is rumour. I remember a rumour about a well-known hamburger chain. It went like this: 'They pit a cow in the front of the machine and at the end of the process: hamburgers!' Probably not true, but I don't eat burgers.
If, as obviously some of the answerers do, you think that a döner kebab is inedible, don't eat it, but don't incorporate your hang-ups in your answers.
I'd rather eat a döner kebab than a hamburger.

Everyone knows they are made from left over fatty meat and are not exactly considered healthy eating. However, when you think about you are eating is grilled meat where most of the fat is taken care of by gravity. Lettuce, tomato, cucumber, cabbage, onions and chilies in a nice healthy pitta bread. All the major food groups are represented!

The main ingredient is breast of lamb but depending on the company that's making it it could contain ears, tongue and basically all the unused parts of the sheep!

Yes, it's made from about 20% minced lamb , the rest is made up of cereals and soyas and it's all held together with lard.
