I live with my parents, and its hard to eat things without meat in them, while their cooking their food...I'm always eating noodles, and salad, and fruit, but its getting old, fast. I need something simple and quick, anyone have any suggestions?

Here are some simple ideas that don't involve a lot of measuring or complicated cooking techniques. I'm assuming that you're a vegetarian, not a vegan, because some of these recipes do use milk and eggs.

Stir fry some broccoli, red bell pepper slices, mushrooms, diced red onion, and diced firm tofu. When the veggies are crisp-tender, add some store-bought Thai peanut sauce. Good stuff!

Heat a can or jar of Northern beans with chopped onion, some minced garlic, and diced tomatoes. Serve with store bought corn muffins that you've heated up in the microwave.

Fry a diced potato and some chopped green pepper and red onion until almost done. Add an egg and scramble into the potatoes. Sprinkle with grated cheese. If you like the bacon-flavored soy chips, you can add some of them, too.

Bake a Bocca burger according to the instructions. Top with guacamole and diced red onion -- or -- use a spoonful of vegetarian chili and a sprinkle of cheese.

One thing that is very simple is to slice some extra firm tofu into fairly thin slices, then fry in some olive oil sprikled with steak spice. Fry fairly well until golden at least. Once this is done, they can be eaten alone, are wonderful in a sandwich with maybe sprouts and tomatoes and cheese if you eat that, or in salad, or brown rice with cayenne pepper and cottage cheese. So fry some up, and put them in the fridge, they only need 30 seconds or so in the microwave to be ready and in whatever you feel like.

Here are two of my favorite fast and easy recipes.

Garbanzo Nuts

One package dried garbanzo beans
Onion powder
Garlic powder

Soak dried garbanzo beans overnight in water. Drain well, then place on nonstick baking sheet in a single layer. Sprinkle on onion powder and garlic powder to taste. Bake in 350-degree oven for 1 1/2 hours or less until beans are brown and crisp.

Rice Salad

1 c. uncooked instant brown rice
3/4 c. Italian or vinaigrette salad dressing
1 1/2 c. corn
5 medium radishes, sliced
1 c. steamed Lima beans or green beans
3/4 c. Feta or goat cheese
3 green onions [optional]

Cook brown rice according to package directions, 10 to 15 minutes. Drain [and cool optional] place in bowl and toss with dressing. And the corn, radishes, beans and cheese and toss.

Serve cold or hot. Excellent fiber, protein packed high in vitamins, minerals and enzymes. Looks beautiful when served.

Have you tried the Morningstar Farms product line? They make veggie burgers, veggie corndogs & hotdogs, veggie chic'n nuggets & patties & strips, veggie "beef" strips, and also veggie burger in a crumble (like regular ground beef) as well as veggie bacon and veggie sausage links & patties. You can cook 'em in the microwave (although for the corndogs I'd use the oven) in seconds, or they take around 20min in the oven. If you use these, your meal will feel more like a meal (you'll still have something on your plate where the meat would be!), and they're really quite tasty. I don't like the other "fake meat" brands (except Quorn and Yves, they're both good too).

A small bowl of granola with a little honey and some rice milk is great anytime of the day. You can warm it up for dinner or eat it cold in the morning. (not saying to have it 24/7, but it is easy and feels good in your tummy)

Try this. I love it.
Boil Some
Soft Tofu
Shitake Musrooms
Frozen Peas and carrots( those small bits)
Small brocolli.

Then Stir fry it in a pan with some soy sauce/ terikyaki sauce and a bit of chili pepper to your liking.
Put it over some Brown rice and you got a meal/ =)

Take the following:

Low Carb Toritalls
Soy Bacon
Avacado
Tomatoes
Onions
Sprouts

Its easy to adjust heathy items per a persons taste. You can even mix a spice pack to the avacados to make it guac if you like.

Just put inside a low carb Tortilla and enjoy

Its so simple

There are quite a few vegan meals at grocery stores if you don't want to cook from scratch while you're staying there. Check the freezer section.
