That is definitely calling for some rice and peas with a side of spicy red cabbage cole slaw. Don't forget the fried plantains. A nice sorrel flavored or ginger flavored lemonade will also hit the spot.
Have plenty of lime and cilantro for garnish.
Honestly cornbread is feeling kinda Southern to me, so I'd use the cornbread and make them more carribean-like appetizers.
Get a mini-muffin pan and make buljol, its like vinegared salted fish with onions, tomatoes and peppers and top each corn bread with a spoonful of the salted fish to start.
Then I'd lead off with the pulled pork, rice and peas, spicy red cabbage cole slaw and fried plantains.
You should be set.

Don't forget the dessert! Cut up Mango and Pineapple and add some shredded coconut. For a side dish try some greens. Kalilou (sp?) is a specialty in the Carribean. Look it up on the internet.

Sweet potatoes boiled and mashed with butter, ginger, cinnamon and clove added. It's nice if the ginger is fresh and grated, but the spices can be good old McCormicks or whatever you have.
I haven't tried allspice, but I wouldn't be afraid to. It's a Jamaican spice.
