cook brown rice
stir-fry various veggies until lightly cooked
add any favorite Chinese sauce
~There are sauce packets in any grocery store for about 89 cents, or you can use some soy sauce

Vegan Cheesecake
Prep Time: 20 Minutes; Ready In: 20 Minutes; Servings: 6
INGREDIENTS:
* 1 (12 ounce) package soft tofu
* 1/2 cup soy milk
* 1/2 cup white sugar
* 1 tablespoon vanilla extract
* 1/4 cup maple syrup
* 1 (9 inch) prepared graham cracker crust
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a blender, combine the tofu, soy milk, sugar, vanilla extract and maple syrup. Blend until smooth and pour into pie crust.
3. Bake at 350 degrees F (175 degrees C) for 30 minutes. Remove from oven and allow to cool; refrigerate until chilled.

Tex-Mex Salad with Chili Vinaigrette
Makes 8 to 10 servings
Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)
Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.
Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Instead of worrying too much about what to serve, it would help if you work on how to serve it. Simple snacks with decorated toothpicks will do the trick. Get some cheap colored paper and glue to make little flags or ornaments to "spice-up" the toothpicks.
Stuffed baby-tomatoes
---------------------------------
Cut the top off the tomato (save it)
Take out the inside of the tomatoes and put in a bowl
Boil red lentils with salt until well-cooked
Add to the bowl
Mash the lentils with pepper, basil and garlic
Put the mash back into the tomatoes
Put the top back on the tomatoes
15 minutes in the pre-heated oven ........ yummie !!
And stick a toothpick through the top to keep it together.
Yellow potato cubes
-----------------------------
Cut half-boiled potatoes (salt!) into cubes
Rub the cubes in with curcuma or mild curry
Put these in the oven (20 min)
Roast some sesame seeds in a dry frying pan
Sprinkle the cubes with sesame and stick the toothpicks in.
(stuffed baby-tomatoes and potato-cubes together on a big flat plate look great)
Sweet bean-balls

Boil the beans with salt until well-done
Mash in a bowl with oregano and powdered sugar
If you can afford it, add tofu to the mash
Roll little balls of this mash (between your hands)
Dip the balls into some flour-and-water-mix
Deep fry...........yummie
Oh, and stick a decorated toothpick ;-)
Serve
--------
Serve these three recipes with rice (boiled with vegan soup-cubes and tiny little bits of cabbage and carrots), and a fresh salad.

Not sure if you are looking for 'finger foods', or a hearty entree.there are lots of ethnic foods which can be served vegan:
Middle eastern: hummus, pita bread, tabbouleh, salad or cut raw veggies
Indian: bhasmati rice, yellow split pea dahl, flat bread, batter-fried vegetables (called pakoras) or samosas (spicy veg in pastry crust---fried)
Mexican: chips, bean and salsa dip or
Mexican casserole: Layer tomato sauce with corn tortillas, vegetarian refried beans, frozen corn, olives, chopped onion,tortillas, sauce...etc. Ending with tortillas and salsa on top. Bake until hot clear through. Serve with rice and a bowl of salsa.

Veggie and fruit trays are perfect for showers. Set a couple of those out with different nuts and roasted chickpeas. All you have to do is chop produce and make the dip!
