Alot has changed in diabetic menus, there are many more foods you can eat. I would suggest you contact your hospital dietician, bring grampa in and you, he and the dietician set up a meal plan for him.
Other alternative, look for your local diabetes education centre or the american diabetes association website. You might also want to check the book the GI Diet which is sanctioned by both the Canadian Diabetic Association and the Canadian Heart and Stroke Foundation. www.gidiet.com
