It goes moldy. I opened a carton in my fridge yesterday and found a dark green covering all over the sour cream. I did not taste it to see if it tasted sour but it looked horrible all the way to the trash can.

Just like any dairy product it has a shelf life, the use by date is a good indicator of when to throw it out. However in answer to your question, techincally i guess it doesn't get any more sour than it already is but from personal experience I do know that it turns green and moldy beyond expiration date of a month or more.

Yes, like other dairy products, sour cream will spoil. Like a previous poster mentioned, the carton should have an expiration date on it.

It "spoils" not sours. Other cultures start growths on it. I'm not sure if the original culture was still alive, as it would probably have been killed in pasteurization.

It goes bad.. that is why it has an experation date.. It usually ends up with mold..yuck..
