The governor of Illinois seems to know alot about sausage. Didn't know jack about the open tolling system he has implemented. The best bet is to call butcher shops and then taste from different ones. You will then find the perfect taste for you. You are much better off buying from a local butcher than a sausage house because the butcher takes pride in making his own because he relies on repeat business where the sausage companies don't take as much pride. it's a pay check.

If you want it straight from Louisiana, check out Ron's Cajun Connection in Utica, IL. He sells not only andouille but boudin frozen and by the pound. Give them a call at 815-667-9855. You can actually just go to Treasure Island. They should have some. On occassion, I have seen them at Jewel down on Broadway and Addison.

Most of the time if you keep asking your grocer to carry an item, they may. It's amazing. I live in Chicago and it seems to work in the city. Not sure where you are but works better in the city.
