Well, that depends....here are some recipes I found.

SCOTTISH SHEPHERD'S PIE

INGREDIENTS
1 pound cooked ham, cut into one inch cubes
2 (14.75 ounce) cans creamed corn
7 potatoes - peeled, boiled and mashed
1/4 cup butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place ham in a 2 quart casserole dish and top with corn. Heat in preheated oven 10 minutes. Remove and top with mashed potatoes. Heat in oven for 20 more minutes, then remove.
Turn oven to "broil" setting. Dot potatoes with butter or margarine, then place pie under broiler just until golden brown on top, about 3 minutes. Serve immediately.

SCOTTISH MINCE PIE


1 1/2 pounds lean ground beef
1 large onion, minced
1/8 teaspoon beef bouillon granules
4 cups water to cover
2 tablespoons cornstarch
1/4 cup water
1 recipe pastry for a 9 inch double crust pie
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Place the ground beef in a large pot and pour in enough water to cover beef. Boil until beef is cooked through. Drain.
Add water to cover cooked beef, add onions and enough bouillon granules to taste. Cook until the onions are soft. Season with salt and pepper to your taste and make sure the filling has enough bouillon to have a nice beef flavor.
Combine the 1/4 cup water with the cornstarch and stir until smooth. Add to the beef mixture and cook until mixture has thickened.
Pour beef mixture into the pastry crust and cover the top with pastry. Crimp edges and prick top.
Bake at 375 degrees F (190 degrees C) for 30 minutes or until crust is lightly browned.

Scottish Steak Pie
1 1/2 lb. beef cubes or round steak, cubed
1/2 c. flour, seasoned with salt and
pepper
1 sm. onion, chopped
4-5 carrots, cut into 6-8 pieces
Pie crust, enough for 1 crust
1 tsp. Gravy Master or Kitchen Bouquet
Pressure cooker
Brown beef cubes dipped in flour in fry pan with the chopped onion. Place
beef, carrots and about 2 cups water in pressure cooker. Add Gravy Master. Cook
on high until cooker comes up to pressure, then reduce to medium and time for
10 minutes. Place beef & carrots in a deep dish pie plate and thicken the gravy
with flour mixed with a little cold water. Pour gravy over top of meat. Cover
with pie crust; cut vents with a sharp knife. Bake at 350 degrees for 1 hour.

SCOTTISH APPLE PIE

2 refrigerated pie crusts (one 15-ounce package), room temperature
1 1/2 pounds Granny Smith apples, peeled, cored, cut into 1/3-inch cubes
9 tablespoons sugar, divided
1/2 cup gingersnap cookie crumbs
1/3 cup orange marmalade
1/3 cup golden raisins
1 teaspoon grated orange peel
1 tablespoon whipping cream




Preheat oven to 375°F. Line 9-inch-diameter glass pie dish with 1 pie crust. Mix apples, 8 tablespoons sugar, cookie crumbs, marmalade, raisins, and orange peel in large bowl. Spoon filling into crust-lined dish. Top with remaining crust. Press crust edges together to seal; crimp edge decoratively. Cut 1-inch hole in center.
Blend cream and 1 tablespoon sugar in small bowl; brush over crust. Bake pie until crust is golden and filling bubbles thickly, about 45 minutes. Serve warm.

Makes 8 servings.

1 (9-inch) pie 1 hour 15 min prep
Change to: (9-inch) pie US Metric
2 (9 inch) prepared pie pastry (homemade or store-bought, I use my No-Fail Butter Pie Crust Awesome No Fail Butter Pie Pastry!)
1 1/2 lbs granny smith apples, peeled, cored and cut into 1/3-inch cubes
1/2 cup sugar
1/2 cup gingersnap crumbs (use only crispy cookies for this not soft)
1/3 cup marmalade (store-bought)
1/3-1/2 cup golden raisins
1 teaspoon grated orange zest
1 tablespoon whipping cream
1 tablespoon sugar

Set oven to 375 degrees, and set oven rack to bottom position).
Roll out the bottom pastry, then line the 9-inch pie dish with bottom pastry, then place in refrigerator while mixing the apple mixture.
In a bowl, mix together 1/2 cup plus 2 tablespoons white sugar, cookie crumbs, marmalade, raisins and orange zest.
Spoon the filling into the pastry crust.
Roll out the top pastry, and then place on top pressing the crust edges together to seal.
Crimp edge decorativly (you can also flute the edges if desired).
Cut a 1-inch hole in center of the top crust.
In a small cup whisk together the whipping cream and 1 tablespoon sugar, then brush over top crust.
Bake for about 45 minutes, or until crust is golden and fruit is bubbles thickly (you might want to place the pie on a baking sheet to catch any spills).
Serve warm.

You can get "Scotch pies" which are a bit of an acquired taste, but not bad, and there is a little known savoury item similar to a Cornish pasty, called a "Forfar Bridie", again not bad. Remember, many Scottish pies and pasties don't have lashings of gravy, or tons of flavour enhancers. Mostly, the ingredients are/were boiled, then filled into the pie/pasty and finally, baked in the oven.
