Try roasting any veggies you like in the oven with a prepared marinade mix, Italian dressing, or some olive oil and spices until they're soft, then putting this onto some really good bread that you've crisped up under the broiler. I'd add some fat free cheese to this, but if you're vegan, feel free to leave it out. This makes an absolutely fantastic sandwich, and the veggies can also be eaten alone and reheated later, if there are any leftovers.

Hi,
When I'm hankerin for a delicious sandwich without soy protein or tofu, I enjoy a classic LT (Thats BLT without the bacon!) I
usually use a toasted high fiber potato bread and just salt, pepper and a squeeze of lemon juice for extra flavor.

well if you are vegan, the this wont work for you but if you arent..
then this is what i love.
season some chicken breast to your taste
while you grill it:
spread once side of the bread you are using with mayo(or no mayo if you dont like it)
cut 2 slices of a tomato.
some lettuce.
when chicken is finished place on the mayo'd side.
top with some cheese if you want, then place tomato slices and lettuce.
sprinkle with a little salt and pepper.(again, if you prefer)
complete the sandwich and MUNCH ON IT

Marinate some veggies in balsamic dressing and grill them (inside or out) and put on a roll with some melted cheese if desired.

Grilled cheese and tomato

Lettuce, tomato, pickle slices, sliced cucumbers, bell pepper strips on a roll with your favorite dressing (sort of like Subway's Veggie delight sandwich)

Mexican wrap: Put sliced avocado, strained salsa, tomatoes, onions and peppers in a wrap.

I luv using Hummus &/or Avacodo for the start of a really good sandwich with lots of fresh veggies. Almost anything you like in a salad works great.
I like nut butters too.

Avocado, Tomato and Rocket Pannini

Ingredients

1 Panini roll or baguette per person
1/2 avocado per person, sliced
1 large tomato per person, sliced
Rocket





You can either use a Panini roll and grill it or use a baguette and use a griddle pan.

Slice the roll in half and put a layer of tomato slices, then a layer of avocado slices and then some rocket. Then another layer of avocado and another layer of tomato

If you are using a Panini roll pop it under the grill until golden brown and then turn over carefully and toast the other side.

If you are using a baguette, lay on a griddlepan and press down hard with a metal spatula until it has dark brown stripes. Then turn over and repeat on the other side.

Double Homous Sandwiches

Ingredients

thinly sliced cucumber pieces
thinly sliced tomato pieces
homous
vegan cream cheese
sun dried tomato paste
4 slices of wholemeal bread




On the first slice of bread spread with cream cheese and put your on the top cucumber . Then place another piece of bread on top and spread thickly with homous. Then add another slice of bread and spread with sun dried tomato paste and then place on your tomato. Finally add the last piece of bread and cut up.

Mmmm mmmm,,,,Portabello Mushrooms!
--Clean 'shroom with damp cloth or paper towel
---Pan fry until browned in a bit of butter (if you use it) or a touch of oil with a little chopped fresh garlic and a sprinkle of salt. You can cook it whole, turning once, or cut into slices.
--If you can keep from munchng it up just as is, place it on a toasted whole-grain bun with vegenaise, mustard, lettuce, tomato and sprouts.
Who needs steak?

Portabella Mushroom Sandwich.

Grill the Mushroom (use water instead of oil to keep mushroom moist)
Put anything you want in the sandwich- cheese, mustard etc.
