Well firstly I suggest that you check this site www.veggie123.com. There ia a lot of info on this site, and it will help you with nutrition.
So what should you not eat? Well meat. No beef, pork, poultry, fish, seafood, or other animal flesh. Some vegetarians dont eat eggs, and some dont eat dairy. But some do. It just depend on the person. Most vegetarians also dont eat products that contain animal flavoring. Like beef, pork, or chicken broth or bullion. We also dont eat gravy made with flesh.
What should you eat. Well obviously fruits and veggies. Pasta, rice, breads, beans, tofu, and fake meats are all great. They are all really good for you and taste great too. For some recipes try www.vegweb.com. There are tons of great vegetarian and vegan recipes on that site, and all of them that I have tried are delicious.

Actually, person above me, seafood isn't considered meat to vegetarians.
In order to be a vegetarian, do indeed stray away from meat or any food with meat included. Now, if you want be a Vegan, don't eat eggs or anything else that comes from animals. This is called a byproduct.

Okay, well first, get some serious research done.
My first question is this: how can you want to be something when you don't know what that something is?
Most people know that vegetarians don't eat meat--this includes all red meat, poultry, seafood, everything. Don't ask about chicken and fish, please. It's not vegetarian.
Veganism is very complex. It's a lifestyle, but it's worth it. No meat, dairy, eggs, honey, or ANY OTHER ANIMAL PRODUCT. No animal testing. No animal ingredients in make-up, shampoo, etc. No leather, fur, wool, silk, etc.

That depends on what you mean by "a vegetarian". Seriously, go to:

and look up your "type", are you a Vegan? Lacto-ovo? Pescetarian? It basically depends on what you won't eat vs. what you will eat...obviously no animal flesh, but are you :
...willing to eat fish? Congrats, you're Pescetarian!
...willing to eat eggs? Congrats, you're Ovo-Vegetarian!
...willing to drink milk and eat cheese? Congrats, you're Lacto-Vegetarian!
...unwilling to eat fish, eggs, any dairy products, wear leather, and don't want to even deal with anything that has any connection with a dead animal (like Jello)? Congrats, you're Vegan...you poor soul...
Your diet as a vegetarian depends on your choices, so listen to your own voices, just be careful to watch that you get enough of the basics of nutrition, as this can be an issue, especially in regards to protein consumption.

There are several categories of vegetarians, all of whom avoid meat and/or animal products. The vegan or total vegetarian diet includes only foods from plants: fruits, vegetables, legumes (dried beans and peas), grains, seeds, and nuts. The lactovegetarian diet includes plant foods plus cheese and other dairy products. The ovo-lactovegetarian (or lacto-ovovege-tarian) diet also includes eggs.

Good for you for taking the first step towards a compassionate and healthy diet! My husband and I have been vegetarians for about 6 years now and can't imagine how we ever ate animals! Being vegetarian generally means not eating meat or meat products. We are lacto-ovo vegetarians which means that we do eat eggs and dairy products. Vegans are vegetarians who eat no animal products whatsoever, including eggs and dairy.
May I suggest going to www.goveg.com to look at different types of vegetarian diets and decide what works best for you. You can also order a free vegetarian starter kit from them.
Also, for dining out go to www.happycow.com to find vegetarian friendly restaurants in your area.

I call myself "vegetarian", but I eat dairy products . I do not
eat birds or animals or fish.
My daughters are "vegan". They do not eat dairy products. They rely on beans, and especially soy products, to get enough protein.
There are lots of soy based lunch meats and non-turkey and stuff like that to make a healthy diet. You still need all your vitamins, especially B-12, iron and fats in your diet.
You should eat what suits YOU. You need to find what is healthy for your body.

Anything containing meat or meat products. But, why? Vegetables are not balanced with respect to the amino acid content of their protein, while meat is. If you do not pay attention to amino acid balance, you can wind up with various deficiency diseases, including a vitamin B-12 deficiency. It is possible to get all the amino acids (but not B-12) from eating an appropriate mixture of vegetables, but one must pay attention. Since food packages do not describe amino acid content, you will need to obtain a suitable book on nutrition and attend to it.

Make lentils and chickpeas your friend! Good for iron and protein but ensure you eat something with vitamin c (eg capsicum, oranges, potatoes) at the same time. This helps the absorption of iron.

You really should read about vegetarianism. You avoid animal flesh as well as anything that comes from a dead animal (animal rennet, gelatin) Animal rennet can be found in many cheeses and gelatin is found in many yogurts, candy, marshmallows.
