To make your own tahini, all you need is sesame seeds and oil. Olive oil is best, but sunflower or canola work. Grind the sesame in a coffee grinder with as little oil as possible. Add oil if needed till you get the desired texture, and voila! tahini.
It might not be as good as the processed one, but its a darn good substitute.

Now, tahini sauce is different from humus. Humus is made using tahini. Tahini actually is sesame paste; sesame seeds ground into a smooth paste. In Cyprus, tahini is mixed (and beaten with a fork) with a little lukewarm water and some lemon juice to form a lighter colored, smooth dip. It is seasoned well with salt and crushed garlic. Finally decorated with some chopped parsley. This tahini "sauce" should taste quite sour. It is an essential accompaniment to fried or grilled fish, and also to some alcoholic drinks like Cyprus brandy, Turkish raki (or Greek ouzo), even wine.

I live in Egypt, and here's how I make it:

I pour about 1/2 cup tahini into a small mixing bowl. Add about 2 oz yogurt and a splash of vinegar. Add garlic salt, coriander seed, and cumin to taste. Just a tad of chili pepper, don't overdo it. Blend well with enough water to make it the consistency you want. The more you stir it, the thicker it will get. P.S. These proportions are extemely approximate because I always just do it off the top of my head.

Chickpeas in Spicy Tahini Sauce
Servings [Reset]

Ingredients :

1cupDried chickpeas
4cupWater
1tblOlive oil
1cupChopped onion
1tspDried basil
2xGarlic cloves, minced
1/4cupTahini
1cupWater
1tblArrowroot
1tblLemon juice
2tblSalsa (hot or mild)
1tblLow-sodium tamari

Method :

* Cook chickpeas in 4 cups water for 2 to 3 hours (stovetop) or 25 to 30 minutes (pressure cooker).
* Heat oil in a large skillet over medium heat. Saute onion and basil unti onion is nearly tender. Add garlic and continue to saute until onion is soft and translucent.
* Stir in tahini and 3/4 cup water. Cook, stirring constantly, until sauce thickens. Remove skillet from heat and set aside.
* In a small bowl, mix remaining 1/4 cup water with arrowroot, lemon juice, salsa and tamari. Add to tahini mixture in skillet. Add chickpeas and cook over high heat, stirring constantly until mixture thickens.







Chick Peas in Olive-Tahini Sauce

1medRed or green bell pepper, chopped
Olive-tahini sauce -- see recipe
3cupCooked chick peas
1/4cupWheat germ
1tblSoy sauce
1/2tspMarjoram
1/4tspCoriander
Black pepper

Method :

* Heat oil in large skillet. When hot, add garlic, onion & celery & saute till onion is translucent. Add bell pepper & saute till vegetables are lightly browned. Remove from heat & pour olive-tahini sauce into the skillet along with the remaining ingredients. Return to low heat & simmer 5 to 7 minutes. Serve over rice or other grain.

Tahini sauce is made of sesame seeds and you
can find in basic form at groceries. If you add
garlic and lemon juice is delicious.

Yes. I love Tahina.
You know you can many dishes using Tahina:

Example:
-- Hummus
Hummus - Chic Peas With Tahina
250 mL (1 cup) dried chick peas
10 mL (2 tsp) baking soda
300 mL (1 1/4 cups) water
juice of 2 1/2 - 3 lemons
10 mL (2 tsp) salt
1 clove garlic, crushed
175 mL (3/4 cup) water
paprika
olive oil
200 mL (3/4 cup) Tahina (sesame seed paste)

Spoon hummus onto a large platter, spread it flat and garnish with paprika and parsley, and if desired, flowerettes of radishes and olives. Drizzle with olive oil.
Serve with Arabic (pita) bread. Makes 5-7 servings Hummus freezes well. It is ideal for entertaining, as part of a meal, or as a dip. Another way of serving hummus is as follows: Cut a lean piece of lamb or beef into grape-size pieces.
Fry in a heavy frying-pan in a bit of olive oil. Cook until all of the moisture has evaporated. Add salt and pepper to taste. Add a handful of pine nuts (if desired) and cook further until the meat and nuts are browned. Spoon into the centre of a platter spread with hummus.

makes a super dressing for cauliflower, in this traditional Middle-Eastern mezze (appetizers). Dip into it with a fork or a chunk of bread.
1 small head of cauliflower, broken into florets or sliced 1/2 inch thick
2 to 3 garlic cloves, chopped
1/2 cup Tahina, any lumps mashed with a fork
1/2 to 1 teaspoon ground cumin
Juice of 1 lemon
Salt and pepper, to taste
Dash of hot pepper sauce or cayenne
A few tablespoons of water, as needed
Garnishes
Paprika
Chopped parsley and/or cilantro
Lemon wedges

Direction:
Cook the cauliflower by steaming or boiling until just tender; do not overcook. Drain and set aside.
Mix the garlic with the Tahina, cumin and lemon juice. Season with salt, pepper and hot pepper sauce.
At this point the mixture is a dense thick paste. Add a little water, tablespoon by tablespoon, until the mixture is creamy, then mix with the cauliflower.
Cover and refrigerate until ready to serve.
At serving time, garnish with a sprinkle of paprika, chopped parsley/cilantro and/or lemon wedges.

just mix it with lemon juice and salt, it will "seize" (go hard) at first but keep adding lemon juice ( or water if you like) until you get the required consistency. I like to add a little crushed garlic too.
