3 cups plain yoghourt
1 cup cucumber, peeled and grated
1-2 cloves minced garlic
juice of 1/2 lemon

Mix, and strain -- place paper towels in a sieve or colander and just dump it in (warning -- place something sizable under it; lots of liquid comes out) and leave it for at least two hours, and as long as overnight. I promise that's a reliable recipe. You can add a bit of mint or dill if you like, and a little drizzle of olive oil on top just before serving it...

Don't use fat-free yoghourt, and you might want to seed the cucumber if it's not the small-seeded 'English' kind, but that's it.

Greek Yogurt is essentially the same as natural American Yogurt that has been strained overnight! Use 2 cups of this strained yogurt and 1 cucumber grated or placed in a food processor and nearly liquefied and add 2 cloves of garlic either minced or added to the cucumber and processed as well. Add juice of one lemon and stir in about 1 to 2 ounces of minced dill (2-4 tablespoons). Refrigerate at least 4 hours and preferably overnight and optionally add 1 tablespoon Italian parsley and serve. Works every time
Note If you have to strain yogurt overnight and you have to chill mixture overnight, then prep time is 2 days!!!!!

here you go greek taziki sauce from a greek all the way from Greece to you.

1. 2 medium size cucumbers
2. 400g strained yoghurt (must be strained)
3. 4 garlic cloves
4. 2 tbsp. olive oil
5. 2 tbsp. wine vinegar
6. a little salt
7. fresh chopped dill

Peel cucumbers and grate each one length-wise with course grater.

Salt, allow to drain and press out excess liquid from grated cucumbers.

Peel garlic cloves, remove sprout if it exists and crush them.

Mix cucumber, garlic, vinegar and salt.

Fold the yoghurt and the olive oil into the mixture.

Add the chopped dill to garnish.

1 tub of greek yoghurt, 2 cloves or so of crushed garlic, 1/2 a cucumber finely diced, chopped parsley. Mix all together, Voila
