Find out if they like Rice or Potatoes.
Also find out if they will eat eggs or tofu.
Then cook the Rice OR potatoes with eggs or tofu.
Add a vegetable (green beans, carrots, onions)
and use any assortment of the following spices:
Cumin
Cayenne Pepper
Garlic
Soy Sauce.
You can cook everything in a stir fry pan - saves on washing pots.
You may want to spice the food so you can eat it, too, and offer additional spices at the table.

How about a Margherita Pizza {recipe to follow} and a mixed greens salad? There are cheese's out there for vegetarians that use no milk and really any of those cheap cheeses are made from vegetable oil so look for those and read the ingredients.
Margherita Pizza
2 cloves garlic finely chopped.
1 teaspoon olive or vegetable oil
1 teaspoon dried oregano leaves
1 package{14 oz.} prebaked Italian pizza crust
1medium Roma or plum tomato thinly sliced
2 tablespoons coarsely chopped fresh basil leaves
1 cup mozzarella cheese
In a small bowl mix garlic oil and oregano. Brush over pizza crust. Top with tomato basil and cheese. Bake in a 425 degree oven for 7 to 9 minutes.

Do a stir fry with firm diced tofu and thin-sliced or diced veggies: carrots, brocolli, red peppers, snow peas, and mushrooms are delicious in combination.
When the veggies are crisp-tender and the tofu is heated through, add a couple of tablespoons of Thai peanut sauce and sprinkle with cashew halves. Serve over rice.
For sides, you can serve fruit salad and some breadsticks.

A roasted vegi soup would be easy and good. Find good quality winter vegi and peppers. Cut them into equal size pieces, toss them with olive oil, salt & pepper, and any fresh herbs. Roast them in the oven at 350 for 20 minutes or until carmelized. (It will cook accourding to vegi size). Add cooked vegi's to a large stock top cover with vegi stock or good quality tomatoe juice. Cook on medium low for 30 minutes. You could puree this for a thick smooth soup or leave chunky. I would serve this along with a good bread and cheese selection. Good Luck!

Go Indian? I looove saag paneer. This is the recipe I use, but I make sure to puree the spinach before incorporating the cheese.

I also really love chana chaat, here is the recipe I use for that. Just note that this is a very hot recipe, so if you like things a little cooler, halve the amount of pepper.

Definitely vegetarian chili or curry. You can serve it over brown basmati rice for a bit of class (and beans + brown rice = complete protein).
