"Vegetarian" is a diet. It typically includes some animal products, such as cheese, milk or honey... but never, ever includes actual animals, fish or birds.
"Vegan" is an ideal towards which people strive. In addition to not eating any animals or animal products, a vegan refrains from using any products made from or tested on animals. This would include wool and leather, most major brands of toiletries and medicines and quite a few other products you might not generally think of... such as 35mm film and concrete.
Of course, very few people can actually achieve this ideal. My house has a concrete foundation that includes bone dust. The antibiotics my doctor recently prescribed for a sinus infection came in capsules made with bone marrow. But I do my best... and that's all anyone can do.

A Vegan doesn't eat ANY product which has come from an animal. A Vegetarian just doesn't eat meat. I myself am a vegetarian

EDIT: Actually, a Vegan is actually like a "strict" vegetarian, who doesn't eat anything that comes from animals, i.e; eggs. A vegetarian will eat anything except meat. I myself am a vegetarian, not a vegan. I eat eggs because it comes from an animal. No animal is killed to get it. If that were the case, I wouldn't go near an egg.

Ok so.... a vegetarian and a vegan are really different.
Vegetarians dont eat and meat, or product made with meat like bullion. Some dont eat dairy, and some dont eat eggs, and some dont eat both. What they eat depends on the vegetarian. Vegetarians who eat eggs are called ovo vegetarians. Vegetarians who eat dairy are called Lacto vegetarians. Vegetarians who eat both are called Lacto Ovo, or Ovo Lacto, vegetarians.
Vegans dont eat any products made with or by animals. They dont eat any meant, eggs, or dairy. They also wont eat sugar, because it is processed with animal bones, jello, because it has hourse hooves in it, or honey because it is made by animals.
There are about as many types of vegetarianism as there are practicing vegetarians. For example, macrobiotics, fruitarians, pesco vegetarians....and many many more.

A vegetarian eats no meat, including seafood. If you eat seafood you are not vegetarian.
Vegans eat no meat, dairy, eggs, honey, or ANY OTHER ANIMAL PRODUCT--this includes ALL other products. We do not use products (like shampoo, for example) that have animal products or that test on animals. We do not wear leather, wool, or any other animal product. We do not support charities that conduct animal tests. Most of us are environmentalists as well.
There is a lot more to being vegan than vegetarian. Vegetarianism is extremely easy, where veganism isn't as easy. Being vegan is a lifestyle, being vegetarian is just avoiding one kind of food.

A vegetarian does not eat any animal meat and a person who is vegan does not eat meat and any products that come from animals, such as eggs, milk, and cheese.

A vegetarian is someone who still eats dairy, eggs, and in some cases, seafood. A vegan is someone who doesn't eat any animal products (byproducts) at all. Also, they do not wear leather, eat honey, or participate in anything harmful to animals.

vegetarians- no red meat, poultry, fish. (thats right NO FISH).
vegan- same as above, but includes no milk, eggs, honey, gelatin, ect. also, most of us dont wear/use any animal products
