I'd suggest picking up a few vegetarian cookbooks. Nava Atlas makes a few great "quick meal" cookbooks like Vegetarian Express and Vegetarian 5 Ingredient Gourmet. If that's too complicated for you, you could branch out into canned soups (like minestrone) or vegetarian chili, which is great served over a baked potato (you could even add some cheese on top). Pasta and tomato sauce is a good go-to. You can crumble in some tofu or add some TVP granules or veggie burger crumbles for some more protein. Frozen veggies are actually quite healthy and fast to microwave or heat. Toss that with some instant brown rice and some canned beans and you've got a fast and well balanced meal. You might also volunteer to cook dinner (either with your mom or independently) once a week, that way you'd be helping your mom out and getting a good meal out of it!

Veggie tortillas/ fajitas are tasty and can be cheap!
You need a pack of tortillas/ wraps (min 2 each), some filling and grated cheese. If you can afford it, some guacamole and sour cream is good too!
For the filling I do a stir fry of chopped veg (green / red/ yellow peppers, onions, and some tomato paste / canned chopped tomatoes. Add some paprika/ cayenne / mex spices for a bit of bite. If you don't fancy this try veggie chili. Whatever you chose, don't make it too wet.
Plop the filling on a warmed tortilla, top with sour cream and cheese and then wrap it all up. Yum!! Serve with some tortilla chips and beer for my favourite meal!

If you can find some curry noodles (like liptons or something) make those, fry some tofu beef strips (3 mins) add beef strips, baby corn and water chestnuts to curry noodles and top with green onions. Serve some nice naan bread, or salad on the side. This will take about 20 mins and cost about $12-$14 total.

Get hold of a cheap book called 'The Vegetarian Student Cookbook' or similar title. I have two and the recipes are desiged to be used save time and money and not on taste! All recipes are sooo easy to do

Sweet potato and pea curry is really simple cheap and different.
To serve four:
3 tbsp curry paste from a jar
1 onion, finely chopped
450g potatoes, cut into chunks
2 large sweet potatoes (about 900g) cut into chunks
600ml vegetable stock, from a cube is fine
400ml can coconut milk
175g frozen peas
small bunch coriander, roughly chopped
Heat the curry paste in a large pan and stir in the onion. Cover and cook for 5 mins, stirring occasionally, until softened. Add the potatoes, stock and coconut milk to the pan and bring to the boil.
Turn the heat down and simmer the curry for 20 mins until the potato has softened. Add the peas, bring back to the boil and simmer for 2 mins more. Season to taste and spoon the curry into bowls. Scatter over the coriander before you tuck in.
YOu can serve it with microwave rice (i recommend lemon and rosmary microwave rice by "uncle ben")

Chop 2 green bell peppers into chunks.
Chop one sweet onion into wedges.
Sautee in a wok or large skillet with a tbsp oil until tender.
Add 2 regular sized cans of red beans, liquid and all.
Season with cajun spice, chipotle, or chili powder or Franks Red Hot.
Add two packets of Uncle Ben's Brown Ready Rice.
Mix until heated. Serve with a dollop of sour cream if desired.
Add pita or tortilla chips if it's in the budget.
THIS IS A FEAST. I love this dish.

Vegetable stirfry. really nice crisp veggies like mange tout and carrot and onion stir fried with some soy sauce, garlic and chinese five spice. Maybe sling some sesame oil in at the end too if you like. Throw a teaspoon of sugar in the stirfry whilst still in the pan. It adds some extra umph. then just serve it with some good brown or basmati rice. Ooh I'm salivating just thinking about it.

For the starter you can make a selection of vol-au-vents with different fillings. Get some ready rolled puff pastry, then with a round cutter cut out lots of circles. With a smaller round cutter make an indentation into each circle (without going all the way through). Pop in the oven, when they have risen and started to brown take them out and just push the centres down to make a perfect pastry case. For the fillings you can have cheese and tomato (like a mini pizza), mushrooms with parsley and chives or roasted vegetables sprinkled with paprika. You can make the fillings in advance and just put them into the pastry cases once cooked then return to the oven for a few minutes to heat through.

Southwestern Black Bean Soup
1 onion
3 cloves garlic
1 yellow or orange bell pepper
2 jalapenos (if you like your food really spicy add three)
2 tbsp olive oil
1 tomato
4 cans black beans
2 tbsp ground cumin
1 tbsp chili powder
1 can organic tomato sauce
3 cups organic vegetable broth
salt and pepper to taste
In a stockpot or large soup pot sauté onion, garlic, bell pepper and jalapenos in olive oil. When onions begin to become translucent add tomato. Drain two cans of the black beans and add to the pot. Mash up the other two cans of black beans and add to the pot. Add tomato sauce, vegetable broth, cumin, chili powder, salt and pepper. Bring to a boil, then reduce heat to medium low and cook for about ½ hour.
