Here is an advice I found useful: Always have roux in your fridge.

Roux (pronounced rue) is made by mixing equal amounts of butter and flour in a pan over heat. keep mixing till you get a brownish, flaky-looking dough. How bown you want it is up to taste. As long as you keep it in a plastic Ziploc container in the refrigerator away from moist, it should last for months (same fridge lifetime of butter).

Roux can be useful for thickening any kind of sauce or soup. Its also the base ingredient for bechamel sauce.
