No. Staunch vegetarians do not like beef. Try her with a joint of grass instead. Many of my friends enjoy these.
Haunch vegetarians now, that's a different matter entirely.

My mother and father always taught me to eat what i was given, especially when dining at someone else's house, therefore it would be rude and ill mannered of your guest to decline anything you have prepared for dinner (hey, you're not a restaurant ok?) Instead of a joint of beef i suggest you prepare veal, it's almost white, doesn't really taste like beef and you could, if challenged, say it's a fillet of quorn.
However, the vegetarian will probably really lose their sense of humour if you tell them it's veal and you may not get a return invite to theirs, to eat green salad.

Ahem look at the word Vegetarian , I believe the clue is in the title !!! Get a nut roast for her and don't use animal fat with any of your vegetables !!!! Green salads are boring !!! How would you like some luncheon meat if you came here to dinner or should I just give you some tofu?

You'd be better off serving a salad or a vegetarian dish. Giving your vegetarian guest beef or any type of meat for dinner is truly insulting.

You might have a big problem serving a vegetarian ...beef!! I have a friend that is allergic to red meat so if your guest is from that category might be prepared with some antihistamines pills and a quick call to the ambulance. Make your guest feel welcomed to your dinner, get some nice vegetarian food, this days are plenty of shops specialized with a good variety of vegetarian dishes.

How about asking her what she would like for dinner? She likely has lots of ideas for foods that are quick and easy to prepare. And while a salad would be more welcome than beef, it's less than exciting to be stuck eating salad (which is usually the only option at many restaurants, etc).

if you are nice you will make her some salad like you say or nut cutlets.
but if you have the guts then just tell her its a vegetarian beef flavoured substitute called beefish, made from tofu and soy protein, with a ditinctly true beefy flavour.... not that i've ever done that or anything.

Please, please, feed her something else. If your guest is a friend, then you will be understanding of her choices. Doesn't mean you have to stop eating beef, but at the same time, have a meat free option. Here is a great idea:
Spicy Thai Vegetables (Gluten Free)
3 tbsp olive oil
1 cup dry brown rice
2 cups water
1 medium yellow or white onion
5 cloves garlic
1 cup chopped asparagus
½ cup chopped carrots
½ cup chopped celery
1 cup fresh cut green beans
1 can coconut milk
1/8 cup brown rice syrup
dash salt
1 tbsp curry powder
10-15 spinach leaves
Cook brown rice in water for about 40-45 minutes. Sauté garlic and onion in olive oil. Add vegetables and sauté until tender. Add coconut milk, brown rice syrup and curry and simmer for about 10-15 minutes. Add rice and serve.
It makes a great side dish for all of you nonvegans, but can also serve as a hearty maindish for you veg guest.

make something else for her. People choose to be vegetarian on choice, some do it for religous reasons, and some feel better about their new diet.
So by offering beef to her , if she is religous she would not touch the meal. She will feel guilty if she has it or that she will feel bad because she had to reject the meal.
Another thing is if it is her diet, then still she might not have the beef, because later on it wont go well with her stomach or she will physically fall a bit ill for having the beef.
Another thing is she would be upset for ignoring that she is a vegetarian.
Therfore, it is better to make vegetarian meal for her, because that shows how high you hold your guest, it shows your courteusy towards them and it makes them feel welcomed.

If you don't make more of an effort you might be described as an ignorant, insensitive, unsociable, carnivore...
.try a bit harder to find (even online) a proper vegetarian meal for your guest.
The whole world will be vegetarian oneday.(maby not in your life)
Start learning now.
