I'm looking at catering for approx 70 people possibly more which is possible, just need the ideas on what to buy and cook for a hot buffet.

Also, could do with ideas on cold buffet foods or foods that can be cooked during the day and served cold such as chicken nuggets etc.

Help ould be appreciated and 10 points to the best answer which according to yahoo would be awarded after the party, I can't help that but you can help me!!

Piece of cake.
I have a no fail answer.

The absolute best dips ever, honest there will be no complaints.

Chili Cheese dip
1 8oz. package of cream cheese. (at the most $1)
1 can chili (depending on your preference .99-$1.50)
1 bag of shredded chedder cheese ($1.50-$2.00 again on prefrence)

Spread cream cheese onto the bottom of a glass baking pan.
Pour can of chili (cold) onto the cream cheese layer, spread out.
Pour bag of chedder cheese on top of the chili.
Ready instantly to eat. Serve with salsa chips.

Veggie dip

1 8oz package of cream cheese (listed above)
1 large jar of marshmallow cream ($1.50-$2.50)

Mix together well, making sure no lumps are left.
Serve with fresh fruit. (I like it best with strawberrys, banana's, and apples. Grapes are good also)

I have just the thing , and it makes alot of food, and it's easy.Just get a bag of large potatoes, 1 once of sour cream, green onions and 2 red onions, chop the red onions in tiny pecies, and the green ones to . Then bake all your potatoes and when they are done. split them down the middle, and dig all the potatoes filling and put them in a bowl, then it's time to make the fillings. Get bacon and make alot of it. And chedder cheese , shed the cheese and put it in a bowl and set it to the side. Now get a big boiling pot. Put in two table spoons of butter, the green and red onions, and mix it until all the red onions are soft. Then let it cool for a while, Then put it in the potatoes and mix it. With the sour cream. Then fill it in with the potatoes skin , after the put the chedder cheese on the top and put the shred bakon on top of it. Put in in a cookie rack and put the oven on low about 15 min. And there you go , good luck.

Wow! Happy Birthday. 70 people....Your will hopefully receive lots of great answers and ideas. Meanwhile, here are our thoughts. If you respond, I will shoot some menu ideas and recipes your way here.

Do you like chicken thighs?
Do you want to serve beef or another meat or are you OK without?
Do you have any interest in also baking something or will you have a cake?
What are your favorite kinds of foods - Mexican, Italian, Chinese?
Do you want to include some spicy foods?
Do you plan on serving chips and dips?
Will you and your guests like raw vegetables?
How many "helpers" will you have at the party to remove empty dishes and / or reheat some casseroles?
Did you purchase just plates or do you also have paper/platic bowls?

Let me know.

mini pizzas work good cold or hot. take a mini muffin pan and break a piece of raw biscuit dough off into the bottom put a little pizza sauce, mozzarella and a pepperoni of top bake at 350 until biscuit is brown! I've used these before as appetizers and people really seemed to like them.

Chicken Salad served with crackers or croissants, mini sausages cooked in BBQ sauce, any type of a cheese ball, fruit tray with fruit spread, lunch meat and cheese (I roll the lunch meat up with a toothpick) cheese dip and chips, veggie tray and dip....good luck and Happy Birthday! I just saw a show on the food network channel where they place shredded cheese on a Ritz cracker, wrap bacon around it and bake it in the oven.

chicken skewers are easy, just take thin sliced chicken and cut it into small strips and put it on skewers that have been soaked in water for 30 mins, pick you favorite jarred marinate or Italian dressing, marinate overnight, and just before serving grill on a grill pan or outdoor grill for 2 mins per side until cooked through

pesto pizza - buy jar pesto, pre-made thin crust pizza shells, mozzarella cheese and Parmesan cheese, spread a thin layer of pesto on the shell, top with the cheeses bake at 425 until crispy, cut into small pieces for easy handling.

mini chili meatballs - 1 bag of frozen Italian style meatballs , 1 can jelly cranberry sauce, 1 jar Heinz chili sauce, 1/2 onion chopped, lemon pepper to taste. in a sauce pan heat together onion, cranberry, and chili sauce, pour over meatballs that have been defrosted and put in a crock pot on low, add lemon pepper toss together, cook on low for a couple of hours. this serves 10-15 double or triple will need big crock pot
