right now, I'm into Thai noodles, they are about a quarter inch thick and aren't too big....with some nice sauces to mix it up with!!

since noodles form the base of a dish,i don't think there is all that much of a difference,types defer with countries & a lot depends on the sauces or gravies that go with the noodles ,on holiday in korea i enjoyed steaming soups with rice noodles dipped in for a couple of seconds only.,they were placed in tiny wire baskets ,dipped in & lifted out in a jiffy.

Not sure they're the best but there are various traditional Japanese noodle dishes such as Soba, Yakisoba, Udon, Ramen, Somen, etc.

Chinese egg noodles are very flavorful. In a soup, however, I like Japanese udon noodles because they are chewy and quite good.
