The artichoke is the unopened flower bud of a type of Mediterranean thistle. The Bud and stem are removed and the plant is allowed to continue to produce. These are usually harvested as smaller buds, but in America, are frequently allowed to get quite large. The difference is that the smaller buds can be eaten whole, but the larger buds have spikes on the ends of the leaves and a fibrous core that is called the 'choke' and is absolutely indigestible as well as nearly impossible to swallow
I do not know what it is called in India, but I would Imagine that you could buy them at an international market, or an Italian market if one can be found

after researching the translation of artichoke from english to the "Indian name"...all I found was artichoke,

Considered the true artichoke, the globe artichoke is cultivated mainly in California's mid-coastal region. It is the bud of a large plant from the thistle family and has tough, petal shaped leaves. They are available year-round, with the peak season March through May. Buy deep green, heavy for their size artichokes with a tight leaf formation
where to buy it...that I do not know at all.

Not sure where you find it in India but it is a thistle-like plant of the sunflower family. I think it might be grown where Anglo influences remain, for example in Ooty, Bangalore and perhaps the northern mountain resorts.

Its not an Indian plant so it does not have a Hindi name. I recently ordered a packet of seeds form Omaxe. Lets see if it germinates.
