a few common and simple spice combinations are:
cumin and coriander in both indian and mexican foods
ginger, turmeric, chili pepper, cumin and fresh cilantro in indian food (also, add some fresh garlic)
not exactly a spice, but coconut milk can be a great tool in thai curries

Firstly, you get a much better aroma from freshly ground herbs rather than dried. Try using things which have a punchy aroma, as this lingers in the nose, even if the taste is not that strong. Examples are coriander, tarragon, fennel, celery seed, cumin seed, mint, rosemary and always garlic.

Chop cellery, onion, carrots and saute until slightly softened.
Add chicken stock and curry powder of any kind, mix well.
Add chicken breast cut into medium sized cubes. Cook until the chick is done. Add enought cocoanut milk to lighten the whole dish by several shades. Cook for 3-5 min. more over med/low heat to thicken.
Make rice from the raw grain, not a box.
Serve your curry over the rice and you will please most folks beyond what their bored American mouths will believe.

Dried Herbs De Provence - pretty much anything, I use it to season meat.
Try stirring cumin seeds into cabbage, rice and risotto.

this is what a chef taught me:
half a glas of salt
a quarter glas of pepper
a quarter glas of paprika
mix all up and use it. very good mix for sauces and meat.
people always loved it. sure your friends will too.
